What you need to make Streusel Coffee Cake
Streusel
- Flour Regular all purpose flour was used to make my cake.
- Brown Sugar Alternative Select an alternative that measures like brown sugar and that can also be baked with for best results.
- Ground Cinnamon Adds a nice touch of flavor to complement the apples.
- Butter. Your butter should be cold and cut into chunks. Unsalted is preferred.
Cake.
- All purpose flour. Regular all purpose flour.
- Baking Soda Added for leavening.
- Salt. If you are using unsalted butter, you can add the salt.
- Ground Cinnamon. For added flavor.
- Butter. Unsalted is preferred.
- Sugar Alternative. Select a granular sugar alternative that measures like granulated sugar and that can also be baked with.
- Brown Sugar Alternative. Select a brown sugar alternative that measures like granulated sugar and that can also be baked with.
- Egg. At room temperature.
- Vanilla Extract. Adds a nice flavor balance.
- Buttermilk. Plain Greek Yogurt can alternatively be used.
Filling.
- Brown Sugar Alternative. Again, use a brown sugar alternative that measures like brown sugar and that can also be baked with.
- Flour
- Ground Cinnamon.
- Apples. Peeled, cored, and finely diced

How to Make No Added Sugar Apple Streusel Coffee Cake
- Prep Time:Prep - 25 mins .
- Bake Time: Bake - 30-35 mins .
- Servings: Makes 10-12 servings .
- How to Serve:This cake can be served warm just out of the oven or cool. Serve this cake with Sugar Free Whipped Cream or a scoop of Sugar Free Vanilla Ice Cream on the side.
- Notes: you will need a 9x9" baking pan, non-stick cooking spray, a small mixing bowl, medium mixing bowls, and a stand mixer with a paddle attachment.
- Prepare. Gather in prepare your ingredients as indicated. This includes removing the cores and skin from your apples. Also, prep your cake pan for nonstick and preheat your oven to 350f.
- Streusel Layer. In a small mixing bowl, use a whisk or a fork to combine together the flour, brown sugar alternative, and ground cinnamon. Add your butter to the bowl and then use a pastry cutter or fork to cut the butter into the flour mixture until the butter is no bigger than the size of small peas.
- Dry Ingredients. In a medium mixing bowl, whisk the flour together with the baking soda, salt, baking powder and cinnamon.
- Cake Layer. In a large mixing bowl, beat the butter with the sugar alternatives on high speed with the paddle attachment until smooth. Add the egg and vanilla extract to the mixing bowl and continue beating on high until combined. Then scrape down the sides of your bowl, set the speed to medium, and slowly add the dry ingredients from the last step and beat until just combined. Lastly add the Buttermilk and beat the ingredients on medium until a smooth, thick batter remains. Set aside the batter for just a second while to prep the filling.
- Filling In a clean medium mixing bowl, use a rubber spatula or similar item to fold the diced apples into the brown sugar alternative, ground cinnamon and flour until the apples to be completely covered with the dry ingredients.
- Assemble Start by smoothing half of the batter from the large mixing bowl over the bottom of your prepared baking pan. Use a slotted spoon to spread the apple filling in an even layer on the top of the batter layer. Evenly spread the remaining half of the batter over the apples and smooth it out into an even layer. Then top the entire cake in an even layer of streusel topping.
- Bake. Bake the cake in your preheated oven until the top of the cake is golden brown and crispy (about 30-35 minutes) .
- Cool Allow the cake to cool for at least 30 minutes to set before slicing it into servings.

Tips for making the best apple coffee cake.
What are the best kinds of apples to use in an apple cake? I personally like to use a mix of sweet and tart apples. Apples that bake well include Honeycrisp, Fuji, Pink Lady, Gala, Braeburn, and Granny Smith.
More helpful tips for you.
- Fresh apple work best in a recipe such as this one. You can use an apple peeler to remove the skin.
- It is the chilled butter that is really the key to a good streusel topping as you want the mixture to be crumbly. If your butter is too warm, the mixture will be smooth and probably not crumbly.
- Using the toothpick test to check for doneness may give false results in this recipe. Be careful when doing a toothpick test as the apple layer may be gooey and it can be confused with unbaked batter.
