Ingredients needed to make homemade brownie cookies from scratch
The ingredients are basic ingredients that you may have on hand.
- Butter. This should be softened to room temperature for better blending. If you are using unsalted butter, add a half teaspoon of salt to your flour.
- Sugar Free Chocolate Baking Bar. This is added to make our cookies even more fudgy in texture and taste. You can use additional chocolate chips instead (for a less, but still, fudgy texture and taste). The bar should be broken up into large chunks.
- Flour. All purpose flour was used to make my cookies. If you decide to try an alternative flour, use one that measures and bakes like all purpose flour for best results.
- Baking Powder. Added for leavening.
- Unsweetened Cocoa Powder. A dark cocoa powder can be used for a richer flavor. I recommend using a basic unsweetened cocoa powder.
- Sugar Alternative. Select a granular sugar alternative that measures like regular sugar and that can also be baked with.
- Eggs. These should also be at room temperature for optimal blending.
- Vanilla Extract. Added for a flavor balance.
- Sugar Free Chocolate Chips. Semi-sweet were used to make my cookies.
Tips for making the best fudgy brownie cookies.
Both chocolate chips and a chocolate baking bar are used to make this an indulgent and fudgy cookie idea. You can however use just the chips if you do not want all of that fudgy indulgence.
More helpful tips for you.
- Room temperature dairy ingredients (butter and eggs) are recommended for this recipe. When these ingredients are soft, they will help the ingredients blend better to make a better cookie dough.
- Adding a teaspoon or two of espresso coffee can bring out the chocolate flavor in these cookies!
- Feel free to add in additional ingredients such as chopped walnuts.
- My cookies have additional chocolate chips added as a topping. You can carefully press these into place just after taking the cookies out of the oven.
- Bake these cookies until they are somewhat set on the edges and soft in the center. This will help them keep their fudgy center.
- The cookies will need to set on the baking sheet for ten minutes after baking to help the bottoms set.
How to make Sugar Free Fudgy Brownie Cookies
Prep Time: 10 minutes.
Bake Time: 10 minutes.
Servings : 24 cookies. .
- Preheat your oven to 350 degrees. Prepare your baking sheet(s) for nonstick. I like to use parchment paper or a baking mat for a recipe such as this one.
- In a microwave safe bowl, place the butter and chocolate baking bar chunks (or chips). Microwave the ingredients until melted, stopping to carefully stir every 30 seconds, until melted. Then carefully stir the ingredients until smooth and well combined.
- While the melted chocolate is cooling to room temperature, in a medium bowl, use a whisk to combine together the flour, the baking soda, unsweetened cocoa powder, and the sugar alternative. Then stir in the eggs and vanilla extract.
- Add the melted chocolate to the mixing bowl and mix until just combined.
- Lastly, use a rubber spatula to fold in the remaining chocolate chips.
- Use a medium sized cookie scoop to scoop out the cookie dough and place the cookies about at least an inch and a half apart from one another.
- Bake the cookies for 10-12 minutes or until edges appear to be set (the center will still be soft).
- Let the cookies sit on the baking sheet for about ten minutes to cool as this will help the center set. Then transfer the cookies to a cooling rack.
Expert Tip👉 If your cookie dough seems too loose or hard to scoop, refrigerate the dough for about a half hour. This will help the dough keep its shape better.
How to store fudgy brownie cookies made without sugar.
Once these cookies have fully cooled, they can be stored in an airtight container. When properly stored, these cookies should keep for up to three days at room temperature or up to three months when frozen.
