    I feel like I am cheating when I think about a Sugar Free Avocado Mug Cake.
    While technically it is a cake, it is made with avocado and no added sugar in it.

    Avocados are the healthy fat that the experts seem to like.
    That makes me happy as I am a fan of the avocado. Avocados taste really good alone or in recipes such as this one.

    Thankfully, avocados have some good nutrient in them.
    They are a good source of Vitamin C. Avocados also have a good amount of fiber.
    Avocados also have folate, Vitamin B-6, and Vitamin K. By the way, Avocados are a fruit that many of us like to grow indoors.

    Avocados can add more than just taste to a recipe.

    In a recipe, such as this one, adding an avocado means that we are adding a fat, that is a good one. This fat is responsible for a more luscious cake texture that few other fats can add to a sugar free cake.

    Make this recipe gluten free or low carb.
    Make this cake gluten free by using gluten free flour instead of the all purpose option.
    Or, you may want to make this low carb by using low carb Carbalose flour.

    This recipe is for a microwave safe 12 ounce sized mug.

    What you will need to make this Sugar Free Avocado Mug Cake

    • Flour- ¼ cup, all purpose, gluten free flour or low carb flour.
    • Sugar Alternative- equivalent to 2 tablespoons of granular sugar. Use granular for best results.
    • Baking Powder- ¼ teaspoon.
    • Milk or water- 2 tablespoons.
    • Vanilla Extract- ½ teaspoon.
    • Mashed Avocado- 3 tablespoons (mash your avocado and then measure out the 3 tablespoons).

    How to make Sugar Free Avocado Mug Cake

    • Mix together the flour, sugar alternative and and baking powder in your mug. Using a fork works well.
    • Stir in the milk/water and then vanilla.
    • Finally, blend in the mashed avocado.
    • Microwave on high for a minute and a half (90 seconds).
    • Allow this to cool before serving.

    Ingredients

      I don't cook or bake with avocado much, but this recipe has definitely inspired me to do so! I am a huge fan of mug cakes and this one looks delicious. I'll be giving this a try...thanks for sharing!
