    Ingredients needed to make homemade cookies with lemon.

    For the cookies.

    • Flour. All purpose flour was used to make my cookies. I have not tried this recipe using an alternative flour however, if you decide to do so, use a flour that measures and bakes like all purpose flour for best results.
    • Baking Powder. Added as a leavener to make our cookies 'fluffy'.
    • Butter. Use butter that has been softened to room temperature. If you are using unsalted butter, add a half teaspoon of salt to your flour.
    • Sugar Alternative. Use a granular sugar alternative that measures like sugar and that can also be baked with.
    • Egg. Your egg should be at room temperature for optimal blending.
    • Lemon Juice. Use freshly squeezed lemon juice that has no added sugar or other ingredients.
    • Lemon Zest. For optimal flavor, use freshly zested lemon zest.
    • Vanilla Extract. Added for a flavor balance.

    Ingredients needed to make a lemon glaze.

    • Sugar Free Powdered Sugar. A granular sugar alternative will not work in this recipe.
    • Lemon Juice. Water can be substituted however, them lemon juice really adds to the flavor of this glaze.

    How to make Sugar Free Lemon Cookies

    Prep Time: 15 minutes. .
    Bake Time: 10 minutes. .
    Servings: 20 cookies, using a medium sized scoop .

    1. Preheat your oven to 325 and prep your baking sheets for nonstick. I like to use parchment paper or a baking mat for a recipe such as this one.
    2. In a medium bowl, use a whisk to combine together the flour, baking powder, and any optional salt.
    3. Next, in mixing bowl, beat together the sugar with the butter until creamy. I use a paddle attachment for this and will stop the mixer to scrape down the sides of the bowl once or twice. Once the ingredients are creamy you can add the egg, lemon juice, lemon zest, and the vanilla extract. Beath the ingredients until combined.
    4. Add the dry ingredients from the first bowl to the mixing bowl and mix until just combined.
    5. Use a cookie scoop to scoop out the dough and then place the scooped dough onto your baking sheets about two inches apart from one another. The use the palm of your hands to slightly press in the dough.
    6. Bake the cookies for 10-12 minutes or until the edges begin to turn golden brown. Let the cookies sit on your baking sheet for a few minutes before transferring them to a cooling rack to fully cool.
    7. To make the glaze simply combine together the ingredients, making adjustments as needed for consistency. Then use a large spoon to drizzle the glaze over the cookies to set.

    Expert Tip๐Ÿ‘‰ If you do not want to top your cookies with the glaze, you can roll the scooped cookie dough in the powdered sugar alternative before baking for a nice flavor balance.

    Tips for making the best lemon cookies.

    Using freshly squeezed lemon and zest is recommended for the optimal flavor in these cookies. It also is the best way to make sure that you are not added actual sugar to this recipe.

    More helpful tips for you.

    1. For a more yellow color in your cookies, simply add a drop or two of yellow food coloring.
    2. Using a cookie scoop is recommended to make uniform sized cookies. If you do not have a cookie scoop you can try using a tablespoon to scoop the dough and then roll the dough between your hands to make them round.
    3. This recipe also works with other citrus fruits! I like lime or orange for a different flavor.
    4. Using fresh ingredients in this recipe is essential to its success. This is especially true for the flour and leavening agent used.
    5. For a more chewy cookie, add a half teaspoon of baking soda to the flour and omit the baking powder.
    6. Adding additional zest to the cookie, the glaze, or sprinkled on top can really give these cookies even more lemon flavor.

    Store these cookies in an airtight container at room temperature for up to 5 days.

    Once the cookies have fully set and cooled, they should be stored in an airtight container. When properly stored, these cookies should keep for about five days when refrigerated or up to a few months when frozen.

      tried this. doesn't seem to be enough liquid? the dough was super super dry like powder.
      I did add the two eggs, the 2/3 cup oil and the extracts....not sure what i'm doing wrong

        Using sugar alternatives in recipes tends to dry them out because unlike sugar, alternatives do not hold on to all of the moisture. As a result, we sometimes need to add a bit of extra 'liquid'. My recipes tend to be more guided towards the use of granular sugar alternatives. Even using a different kind of alternative than I use may cause a bit of difference. I think that if you were to use the same ingredients and try this again, perhaps adding a bit more oil (a small bit at a time) might help. Or, even switching to 2 sticks of butter or a combination. Thanks!
