    It is both the convenience of bite sized tarts and the sweet and tangy creamy lemon filling that makes this a crowd pleaser.

    Ingredients you will need to make Mini Lemon Tarts.

    • Phyllo Cups. Your phyllo cups should have no or low added sugar to keep this recipe as sugar free as possible. Also, the cups should be at room temperature before using in this recipe.
    • Sugar Free Condensed Milk. I have a recipe for making Sugar Free Condensed Milk here. Or you can use an alternative such as coconut milk instead.
    • Lemon Juice. Use freshly squeezed lemon juice rather than packaged lemon juice.
    • Lemon Zest. You should use freshly zested zest.
    • Flour. All purpose flour is used as a thickening agent for the filling. Almond flour can alternatively be used.
    • Salt. A small amount it used just for a bit of balance in flavors.
    • Berries. My tarts are topped with a raspberry that has been sliced in half. You can omit this topping or use another berry instead.

    Expert Tip๐Ÿ‘‰ It is easiest to first zest one of your lemons for the zest needed in this recipe before squeezing out the lemon for juice as the lemon is most firm with the juice intact. Feel free to use more or less zest to adjust the tart flavor of your tarts as desired as well.

    How to make Sugar Free Mini Lemon Tarts

    Prep Time: 10 minutes
    Cook Time: 16 minutes
    Inactive Time: 10 minutes
    Servings: 30 mini tarts.

    1. Start by preheating your oven to 350 and prepping a rimmed baking sheet with parchment paper or a baking mat. My tarts were made on a 9x13 baking sheet.
    2. Place the phyllo cups on to the baking sheet so that there is room between each of the cups yet, they are able to stay in place while transferring to the oven.
    3. Start by making the custard. In a large bowl combine together the condensed milk, lemon juice, lemon zest, flour and salt. Use a whisk to mix the ingredients until smooth and creamy.
    4. Next, use a scoop or tablespoon to fill each of the phyllo cups to about a half inch from the top.
    5. Bake the filled phyllo cups for 16-19 minutes or until the custard has set and the cups start to turn golden brown.
    6. Carefully transfer each of the baked cups to a cooling rack and allow them to fully cool and set (about 20 minutes at room temperature).
    7. To serve the baked tarts, simply place a berry or your desired topping on top and enjoy.

    Tips for making the best lemon tarts.

    Most mini phyllo cups come with no added sugar or with minimal sugar added. You can check the packaging as needed to make sure that yours have no added sugar in them.

    More helpful tips for you.

    1. Use freshly squeezed lemon juice for best results. Prepackaged lemon juice often has other ingredients, such as sugar, added to it.
    2. Use a rimmed baking sheet to bake your tarts in. A rimmed baking sheet will help keep your cups from shifting around and allow for them to be baked through.
    3. These lemon tarts are done baking when the custard filling has set and the crust starts to turn golden brown. You can remove them from the pan and place them onto a cooling rack at this point to allow them to cool to room temperature.
    4. You can speed up the cooling of your tarts by placing them in your refrigerator.

    How to store lemon tarts.

    These mini lemon tarts should be allowed to fully cooled before being placed in an airtight container. When properly stored, these mini tarts should keep for up to three days refrigerated or two months when frozen.
