Gingerbread Spice Keto Low Carb Mug Cake
Mug cakes are really a great idea if you really think about it.
They are easy to make, only need a few ingredients, and you do not have to share yours with anyone else if you do not want to!
This mug cake has a bit of a holiday twist to it as well.
It certainly is not every day that you can find something sugar free that is also gingerbread. However, this cake is thanks for a 'cheat' that is friendly to the sugar free diet.
There are a few ingredients that you will need for this recipe.
First of all, you will need some Gingerbread Spice. You can find Gingerbread Spice, with no added sugar, online here. You could use regular flour however, there are also alternatives that you could use.
Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour.

As mentioned, you can find Gingerbread Spice, with no added sugar, online here. You could use regular flour however, there are also alternatives that you could use.
Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour.
What you will need to make this
- Butter- 2 Tablespoons
- Flour or Alternative- 4 tablespoons. Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour.
- Baking Powder- ½ teaspoon.
- Sugar Alternative- Equivalent to 2 tablespoons of sugar.
- Milk or alternative (like almond milk etc)- 1 tablespoon.
- Egg Yolk- 1
- Vanilla Extract- 1 teaspoon.
- Gingerbread Spice, with no added sugar - 1 ½ teaspoons.
Gingerbread Spice Keto Low Carb Mug Cake
- Make sure that you use a microwave safe cup for this recipe. Melt the butter in the cup on high. I cover this loosely with a microwave safe paper towel to prevent splattering. It should take about 30 seconds or so to melt the butter.
- Stir in the dry ingredients (flour, baking powder, and sugar alternative). Then add the remaining ingredients.
- Microwave your cake for one minute. If the cake sides do not appear to be separating from the mug, then microwave for another 15-30 seconds. A sign that this cake is done in the microwave will be that the sides of the cake are separating from the mug. The cake may still be baking on the inside after microwaving as this is the nature of microwave cooking. Thus, allow the cake to cool before serving.
- You can top this cake with additional Gingerbread Spice, with no added sugar if desired.

Ingredients
- 2 tbs Butter
- 4 tbsp Carbalose
- ½ tsp Baking Powder
- 2 tbsp Splenda
- 1 tbsp Milk
- 1 Egg Yolk
- 1 tsp Vanilla Extract
- 1 ½ tsp Gingerbread Spice
