    That cookie is another standard holiday cookie idea that can be made without adding sugar to it.
    This recipe is less complicated than that recipe as there is not cookie cutting and decorating involved with this recipe.
     

    I am always looking for the perfect way to store my food. Luckily, I found these genius ideas for food storage which may also be helpful for you!

    I have always wondered does meringue need sugar.

    You would think that it does as sugar gives structure and flavor to meringue cookies.
    Sugar has structural properties in it that you would think make it perfect for making into a cookie like a meringue cookie.

    However, what makes a meringue cookie so perfect does not simply rely upon the sugar.

    What is important is that we use egg whites and cream of tarter.
    These are the ingredients that will make these cookies sugar free meringue cookies.

     

    Looking at these cookies you may be wondering how do I make meringue crisp.

    The secret for making crisp meringue cookies really has to do with the oven.
    By oven, I mean the cookie baking process.

    Here is what you need to know about baking meringue cookies.

    These cookies are baked at a low temperature and for a long time.
    However, even more important is that you should turn the heat off and allow the cookies to set in the oven overnight (without opening the oven door).

    Beating the Meringue Ingredients is Essential to this Recipe. You can add food coloring at this point as well.

    Here are some tips for making meringue cookies.

    I mentioned that the secret to making a successful meringue cookies is that they are baked for a long time and at a low temperature. This allows the cookies to get to that perfect hardened point.

    Here are some more helpful tips.

    1. This cookies can be made using a piping bag with a star tip. However, not everyone has these on hand. So, feel free to use a plastic zip top bag with a cut corner or a simple tablespoon to make your cookies.
    2. Make your meringue cookies even more colorful by adding a few drops of food coloring. Or, you can add a better tasting extract such as mint extract or strawberry extract.
    3. Here is a simple hack. Add a couple teaspoons of sugar free gelatin mix with an extra egg white or two (adjust as needed). This will give your cookies both color and flavor!!

     

    How to store meringue cookies.

    The good news is that these cookies can be stored in an airtight container at room temperature for up to two weeks. Even better, you can freeze these cookies away for later enjoyment in an airtight freezer container!

    These cookies really rely upon the cream of tarter and the egg whites to make them so good.
    Also important is that you bake these cookies at a low temperature for a long time and then turn the oven off to allow them to harden for as little as an hour to overnight.

    Use a sugar alternative that is granular and measures 1:1 with sugar for best results in this recipe.

    A sugar alternative or blend alternative that measures 1:1 with sugar should work fine.
    However, for a more 'fluffy' result, try using a sugar free keto friendly powdered sugar blended in with or instead of the granular alternative.
     

    Ingredients needed to make sugar free low carb meringue cookies.

     

  • Egg Whites- 4. One or two additional can be added if needed. Vegan folks can try using an egg white alternative with modifications as needed.
  • Cream or Tartar- ยผ teaspoon.
  • Salt- a quick dash.
  • Vanilla Extract- 1 teaspoon.
  • Sugar Free Sugar Alternative- 1 cup equivalent to sugar. Please use a granular sugar alternative that measures 1:1 with sugar for best results. Also, use a sugar alternative that can be baked with.
  • Food Coloring- 1-2 drops as desired. Can omit.
  • How to Make Sugar Free Meringue Cookies

     

    • Preheat your oven to 250. Prep two rimmed baking sheets with parchment paper.
    • It is essential that you use a clean bowl and beaters (or whisk attachment) to make this recipe. Objects, such as fat, that are on the bowl or beaters can negatively affect these cookies.
    • In a mixing bowl, combine together the egg whites, cream of tartar dash of salt and the extract. Beat this on high until the mixture appears foamy. You can add optional food coloring at this point as well.
    • Next, you can add the sugar alternative. Do this one tablespoon at a time, continuing to beat the ingredients. Continue to beat the ingredients until stiff peaks form. The batter should appear to be stiff enough to hold its own if it were to be dropped.
    • Use a tablespoon, piping bag outfitted with a star tip, or a plastic zip top bag with a cut corner to from the cookies on the prepped cookie sheets. Make sure that you leave room between the cookies.
    • Bake these cookies for an hour and a half or until the cookies begin to brown. Then, leave the oven door closed, turn off the oven (use the oven light to check on the cookies) and allow the cookies to set. This can take from one hour to up to eight hours depending on how crisp you like your meringue cookies to be.
