    Keto Low Carb Cucumber Sushi

    This delicious, quick and easy Keto Low Carb Cucumber Sushi is made to resemble the popular Philadelphia Style Roll but without all of the carbohydrates.

    This recipe for Keto Low Carb Cucumber Sushi is really an easy way to enjoy Sushi without the rice or added carbohydrates in it.
    This sushi is tasty to eat as well

    This recipe is for those of us who have avoided sushi because of the carbs in it.
    However, it is possible to have your sushi and go low carb at the same time.
     

    This recipe is made without rice.
    As your probably already know, rice is a carb rich food that should be avoided when you are on a low carbohydrate or similar diet. As serving or rice, about a cup, has around 45 calories in it with half a gram of fiber, which can be more than most low carbers can eat in a day.
     

    Technically, authentic Sushi is a dish that is prepared with rice.

    However, this is not 'authentic' sushi. Authentic sushi is usually also made with seaweed which is used as an outer wrapper holding the other ingredients together.

    This sushi is made with cucumber instead of seaweed,
    This is mostly because I personally do not have access to seaweed and also, it is not as loved as cucumbers for many people. However, if you would like to use seaweed for your sushi, please do not hesitate to do so.
     

    There really are two great ways to use cucumber for your sushi.

    The usual way to use cucumber is to slice off the ends, peel it (or not), and then cut the cucumber horizontally to form strips. You would then place your other ingredients on to the strip and roll up the sushi before serving it.

    However, I am lazy or sometimes I may be in a hurry.
    Thus, I may want to make my sushi using a hack or two. As a result, I have an easier method to make my sushi.

     

    Instead of rolling up our cucumber with the ingredients inside, we are going to stuff the ingredients inside of the sushi instead.

    This is one of those 'oh yeah' moments when you realize something could be made just as effectively yet, with less effort. This 'stuffed' sushi tastes the same as the rolled up version, although, you are still welcome to use the roll up version.

    To stuff your sushi, or cucumber, you will need to cut the center (seeds etc) of the cucumber out after you have sliced it.
    You could use a knife and a spoon to remove the center of the cucumber. But, using a huller, apple corer, or even a small round cookie cutter can make this task even easier.

     

    Lastly, you may be wondering what to use as a sushi dip.

    Obviously, soy sauce is a common item that goes with sushi. However, you can also find other great dips to serve with your sushi online. Be sure to check the carbohydrate count and the serving size before serving your sushi with any of these dip ideas.

    The recipe for Keto Low Carb Cucumber Sushi

    To prepare the cucumber for this recipe, wash the outer skin of the cucumber and cut off the two ends.
    Next, slice the cucumber into ยฝ-3/4" thick slices.

    Remove the meaty center of each slice of cucumber.
    As mentioned, you could use a knife and a spoon to remove the center of the cucumber. But, using a huller, apple corer, or even a small round cookie cutter can make this task even easier.

     

    What you will need to make this Keto Low Carb Cucumber Sushi.

    Please substitute with your choice of ingredients. My sushi is molded after the 'Philadelphia Roll' style of sushi.
     

    Ingredients needed to make a Low Carb 'Philadelphia Roll" Sushi.

    • Cucumber- 1 prepared as described above. Wash the outer skin of the cucumber and cut off the two ends.
      Next, slice the cucumber into ยฝ-3/4" thick slices. Remove the center.
    • Smoked Salmon- About two ounces, cut into smaller pieces.
    • Cream Cheese- two ounces.
    • Avocado- ยฝ of an average sized avocado cut into slices. A firmer avocado will obviously slice better. However, you could just use guacamole if you really want to. ๐Ÿ™‚

    How to make Keto Low Carb Cucumber Sushi

     

    • Prepare your cucumber slices as described above and lay the pieces on a flat work surface.
    • Simply 'stuff' the remaining ingredients into the center of the slices of cucumber.
    • Serve as desired with sauces.
