Because of its texture, chickpea flour can work as a thickener as well.
For example, many people will add all purpose flour to gravy as a thickener.
Chickpea flour is a great gluten free alternative that can be used in the place of all purpose flour in gravy and other sauces.
I mentioned that this is the perfect chip to dip into some great tasting hummus.
Hummus is also made with chickpeas which is why they work well together. You can find an easy recipe for hummus on FoodWineandLove as well.
I should also mention that this chip can be personalize with seasonings.
For example, you can make this into a Salt and Vinegar tasting chip using a salt and vinegar seasoning or a Garlic and Pepper tasting chip using a garlic and pepper seasoning. I personally am partial to the seasonings from Trader Joe's such as the Everything But The Bagel and the Chile Lime seasonings.
These ChickPea Chips can easily double as crackers.
When you roll out the dough for these, simply make it a bit thicker (like ¼"). Then cut them into a square or rectangle rather than a triangle.
