- Flour. Scoop and level the flour to get an accurate measure.
- Baking Powder and Baking Soda. The leaveners used for this cake.
- Spices. Ground Cinnamon and Allspice.
- Butter. Softened to room temperature. If you are using unsalted butter you can add a half teaspoon of salt to your flour.
- Sugar Alternative. Granulated Sugar Alternative and Brown Sugar Alternative Select sugar alternatives that measure like sugar and that can also be baked with.
- Eggs. Large eggs at room temperature.
- Extracts. Vanilla Extract and Rum Extract.
- Apples. Peeled, cored, and finely diced.

How to Serve: This cake can be served warm just out of the oven or cool. Serve this cake with Sugar Free Whipped Cream or a scoop of Sugar Free Vanilla Ice Cream on the side.
Notes: My cake was baked in a springform style cake pan. However, it can be baked in about any kind of cake pan, making adjustments as needed for bake time.
- Prepare. Gather in prepare your ingredients as indicated. This includes removing the cores and skin from your apples. Also, prep you cake pan for nonstick and preheat your oven to 350f.
- Dry Ingredients. In a medium bowl, use a sifter (or whisk if you do not have one) to combine together the flour, baking powder, baking soda, cinnamon, allspice, and optional salt.
- Wet Ingredients. Beat together the butter and sugar alternatives until light and fluffy (about two minutes). Scrape down the sides of the bowl and beat in the eggs one at a time, stopping to scrape down the sides of the bowl between additions. Then blend in your extracts (vanilla and rum).
- Combine. Set your mixer on low and slowly add the dry ingredients from the first bowl to the mixing bowl, mixing until just combined.
- Apples. Use a rubber spatula or similar item to scrape down the sides of your mixing bowl. Then fold the apples and chopped walnuts into the cake batter.
- Bake. Evenly spread the cake batter into your prepared cake pan. Bake your cake until a toothpick comes out clean from the center of the cake (25-35 minutes depending on your oven and the pan used).
- Cool. Carefully remove the cake from your oven and place it on top of a wire cooling rack. While the cake is cooling you can sprinkle the remaining brown sugar alternative and chopped walnuts on top. I like to loosen the springform after about 15 minutes cooling on the rack so that the cake can finish cooling.
Tips for making the best apple cake
What are the best kind of apples to use in an apple cake? I personally like to use a mix of sweet and tart apples. Apples that bake well include Honeycrisp, Fuji, Pink Lady, Gala, Braeburn, and Granny Smith.

- Fresh apple work best in a recipe such as this one. You can use an apple peeler to remove the skin.
- Because ovens bake differently and you may be using a different kind of cake pan from the one used in baking my cake, I would do the toothpick test at about 23 minutes just to see where you are in baking. Do the test in the center of your cake.
- If you will be adding a glaze, frosting, or topping to your cake, make sure that your cake has fully cooled first.
How to store homemade apple cake.
Once your cake has fully cooled it can be stored in an airtight container. When properly stored, apple cake should keep for up to a few days at room temperature, up to a week when refrigerated, or frozen for up to a few months.
