This is the perfect recipe for summer if you were to ask for my opinion!
I like that this recipe is all about a fruit that is so synonymous with summer!

 

Around here, you really know that you are in the summer mode when you see the patriotic colored fruit in abundance in the local grocery stores.
Obviously, one of those great tasting fruits is the blueberry. However, you could easily substitute in any similar fruit in order to enjoy this recipe!

 

You may be wondering how this could be 'sugar free' when this recipe calls for blueberries.

I mean, blueberries are sweet tasting and it is sugar that makes something taste sweet after all. I was kind of wondering the same myself to be honest.

Checking out the nutrition of blueberries can give us some insight about the sugar.
One cup of blueberries has about 14 grams of sugar. However, this is natural sugar and also, the only source of sugar that is added to this recipe. By the way, there are a lot of benefits associated with eating blueberries which makes them even friendlier to certain diets. As a result, if you are watching your sugar, moderation certainly should be considered just as it is with anything else.

 

To make this recipe we are going to use Coconut Cream.

However, if you want a thinner texture to your ice cream, you could actually just use coconut milk instead or half and half should also work (not a vegan alternative however). Coconut milk has a consistency that is more like regular milk while coconut cream is a thicker consistency much like a cream has.

Look for an unsweetened version of Gluten Free Coconut Cream.

You will also need blueberries, as you may have guessed.

Since we are not making this recipe in an ice cream maker, we will need to freeze those blueberries before we actually make this recipe. However, frozen blueberries are a treat in themselves in my opinion. 🙂

I should also mention that you could certainly freeze your leftover blueberry ice cream.
Be sure to cover it well and allow it to defrost a bit before serving. That is, if you even have any leftovers.

 

This is a 'no churn' recipe.

That means you will not need an ice cream maker to make it. However, you could use a food processor or sturdy blander such as a Vitamix (what I use).

The recipe for Sugar Free Blueberry Ice Cream

As mentioned, you will need Coconut Cream to make this recipe.
However, if you want a thinner texture to your ice cream, you could actually just use coconut milk instead or half and half should also work (not a vegan alternative however).
Coconut milk has a consistency that is more like regular milk while coconut cream is a thicker consistency much like a cream has.
 

What you will need to make this Sugar Free Blueberry Ice Cream

 

  • Coconut Cream - 1 cup. For a thinner consistency, you can use coconut milk instead of the cream or half and half should also work (not a vegan alternative however). You can also add ½ cup additional if you want more of an 'ice cream' and less of a 'fruit' dessert from this.
  • Blueberries- 2 ½ cups frozen. This will be divided as well.
  • Vanilla Extract- 1 teaspoon.
  • Sugar Alternative- equivalent to 1 ½ tablespoons of sugar. This does not have to be a granular alternative as well.

Also mentioned above, this is a no churn recipe which means that you will not need an ice cream maker to make this.

However, you could use a food processor or sturdy blander such as a Vitamix (what I use).

How to make Sugar Free Blueberry Ice Cream

 

  • In a food processor or sturdy blender, combine together 1 cup of the coconut cream (or alternative), 2 cups of blueberries, the vanilla extract, and sugar alternative.
  • Process or blend until your reach your desired consistency. For a thinner consistency, simply add a bit more of the coconut cream (or alternative) until you get there.
  • Stir or fold in the remaining blueberries and serve.
