    • Flour. My cake was made using all purpose flour. Feel free to try an alternative flour that measures and bakes like all purpose flour.
    • Baking Soda and Baking Powder . The leavening agents used in this cake.
    • Ground Cinnamon and Ground Nutmeg. Added for additional flavors to enhance the carrot flavor.
    • Sugar Alternative. Use a granular sugar alternative that measures like sugar and that can also be baked with, for best results.
    • Buttermilk. Added for both moisture and to help with the leavening to make a more fluffy cake.
    • Vegetable Oil. This add moisture and helps to make the cake fluffy and moist.
    • Eggs. Your eggs should be at room temperature for this recipe
    • Vanilla Extract. Added for flavor balance.
    • Carrots. The carrots should be grated or shredded. Shredded carrots were used to make my cake .

    • Cream Cheese. Use a full fat cream cheese that has been softened to room temperature.
    • Sugar Free Powdered Sugar.
    • Milk.

    Tips for making the best carrot cake.

    This is one of those recipes that I like to double prep the cake pan for as this cake is dense thanks to the tasty carrots. I double prep by first greasing the pan and then lightly dusting with flour.

    More helpful tips for you.

    1. This cake works great when you add a handful or so of raisin or similar dried fruit. The chewy element works so well when you are chewing on the moist carrot cake!
    2. Use fresh carrots that have been freshly shredded or grated carrots for a more moist cake.
    3. Avoid over-mixing the ingredients as doing so can cause your cake to lose air and become more dense. It is okay if your cake batter has a few small lumps in it as these will most likely bake out.
    4. For added flavor, a crunch element, and to make your cake even better looking, top your cake with toasted shredded coconut, chopped walnuts, or chopped pecans.
    5. Carefully running a butter knife around the outside of the cake just after taking it out of the oven can help loosen it from the pan when you are ready to do so.
    6. The cream cheese based icing is the perfect match for carrot cake . Just make sure that your cake has fully cooled before you add the frosting to it.

    How to make Sugar Free Carrot Bundt Cake.

    Prep Time: 10 minutes .
    Bake Time: 50 minutes .
    Servings : 16, depending on how it is sliced .

    1. Preheat your oven to 350. Double prep your cake pans for nonstick. I grease my pans and then dust them with flour.
    2. In a medium mixing bowl, use a whisk to blend together the flour, baking soda, baking powder, cinnamon, and nutmeg.
    3. Next, in a mixing bowl, beat together the sugar alternative with the oil until combined. Then mix in the the eggs, buttermilk, and the vanilla extract.
    4. Add the dry ingredients from the first bowl to the mixing bowl and mix until just combined. Then use a rubber spatula or similar item to fold in the carrots and the walnuts.
    5. Transfer the ingredients to your prepared bundt pan and then gently tap the bottom of the pan on your countertop a couple of times to help evenly distribute the batter.
    6. Bake the cake until a toothpick comes out clean from the center of the sides of the cake (about 45-50 minutes).
    7. Let the cake cool for about ten minutes before transferring to a cooling rack to fully cool before adding the icing.
    8. To make the icing, start by beating the cream cheese until smooth and
      creamy. Then stir in the sugar free powdered sugar and milk , making adjustments in the ingredients as needed for texture. to make the icing.
    9. When the cake has completely cooled carefully pour or drizzle the cream cheese icing on top and then top that with optional chopped nuts.

    Expert Tip ๐Ÿ‘‰ I like to grate or shred my carrots first and them let them sit on clean paper towels for five minutes or so to drain a bit of the water before I add them to the recipe.

    • 3 cups Flour
    • 2 tsp Baking Soda

    • 1 cup Buttermilk
    • ยพ cup Vegetable Oil

    Icing Glaze

    • 4 oz Cream Cheese - soft
    • 2 cups Sugar Free Powdered Sugar
    • 3 tbsp Milk
