What you need to make keto mug cake.
- Almond Flour
- Baking Powder
- Coconut Oil
- Monk Fruit Feel free to use the sugar alternative of your choice. The alternative should measure to 1 tablespoon of monk fruit and be able to be baked with.
- Vanilla Extract
- Egg- Lightly beaten (basically stirred one or two times).
- Sugar Free Chocolate Chunks- Can't find chunks with no added sugar? Use sugar free chocolate chips or break up a sugar free chocolate bar. You can also add an extra to the cake when it is done baking as a topping
How to make Sugar Free Mug Cake

- Give your microwave safe mug a quick spray with nonstick. Then add the almond flour and baking powder, giving them a quick stir with a fork to blend and break up any chunks.
- Stir in the coconut oil, monk fruit, vanilla extract, and the egg until just blended. Place the chocolate chunks/chip on top. You can gently stir or press them in if desired.
- Microwave the cake for 60 seconds on high. If the sides of the cake seem to pull away from the mug, allow the cake to cool and then enjoy. However, if the sides do not seem to pull away simply microwave for another 10 second increments (and checking) until done.
- Please note that it is important to allow the cake to cool before eating it as microwaved food tends to continue to bake even after taken out of the microwave.
Tips for making the best mug cake.
Do not overfill the mug with the batter. This is because, like with most other cakes, this one will rise while baking and you most likely do not want the added mess of an overflowing mug cake.

- Even though this recipe is made in a mug, you can use a similar microwave safe container to make this recipe in. One idea that I like is to make this recipe in a microwave safe ramekin.
- This recipe calls for coconut oil as the fat and it adds moisture to the cake. Feel free to use softened butter if you desire to although it may not turn out as moist as coconut oil.
- While this recipe uses chocolate chunks, you can easily use sugar free chocolate chips instead.
How to store mug cake.
In the event that you cannot eat the entire mug cake in one sitting, you can save it for later.
Simply cover it to keep the air out and store in in the refrigerator for up to three days.
