What makes this cookie croissants so good?

Cookie croissants are so good because they feature slightly soft and gooey warm cookie dough inside and on top of buttery, flaky croissants.

I like that cookie croissants are incredibly easy to make at home, using store-bought croissants and a delicious from-scratch sugar free chocolate chip cookie dough.

Have you tried my recipe for Sugar Free Brookies (cookie brownies)

Made with chocolate chip cookie batter and brownie batter, those brookies are fudgy like a brownie and chewy like a cookie. Both this recipe for cookie croissants and that recipe for brownie cookies are easy and great tasting recipes made with no added sugar.

Sugar free chocolate chips for baking are used to make the cookie dough portion in this recipe. You can find Sugar free chocolate chips for baking here.

What you need to make cookie dough croissants

    • Flour Regular all purpose flour was used in my cookie croissants.
    • Baking Soda. Gives the cookie dough a bit of leavening.
    • Butter If you are using unsalted butter you can add a half teaspoon of salt to the flour. Your butter should be melted.
    • Brown Sugar Alternative Use a brown sugar alternative that measures like sugar and that can also be baked with.
    • Vanilla Extract. Added for a bit of flavor balance.
    • Egg Your egg should be at room temperature.
    • Sugar Free Chocolate Chips Use sugar free chocolate chips that are able to be baked with.
    • Croissants Regular store-bought croissants.

How to make Cookie Croissants with no added sugar.

    • Prep Time: 20 minutes .
    • Bake Time: 10 minutes .
    • Servings: 6 croissants .
    • How to Serve: serve warm with milk or as desired.
    • Notes: To make this recipe you will need a baking sheet, parchment paper, stand mixer with flat beater attachment, rubber or silicone spatula, and bread knife.

    1. Prepare. Preheat your oven to 350ยฐF. Also, line a baking sheet with parchment paper or you can use a baking mat.
    2. Flour. In a medium bowl use a whisk to combine together the flour and baking soda.
    3. Beat. In a mixing bowl outfitted with a flat beater attachment, beat together the melted butter and brown sugar alternative on medium high until well combined (about a minute). Then scrape down the sides of the mixing bowl and add the vanilla extract and egg and beat the ingredients for another minute.
    4. Dry Ingredients. Add the flour mixture from the medium bowl to the mixing bowl and mix the ingredients until just combined.
    5. Chocolate Chips. Lastly, fold in the chocolate chips.
    6. Croissants. Use a bread knife to slice each of the croissants in half lengthwise. Place two tablespoons of the cookie dough in the center of each croissant and then place the remaining dough on top of each croissant.
    7. Bake. Bake the croissants for 10 minutes, or until the cookie dough on top is starting to turn golden. Allow to cool on the baking sheet before serving.

Tips for making the best crookie cookie croissants.

When selecting croissant opt for large, all-butter croissants for the best flaky, rich base. Day-old croissants work great as they are firmer and can hold up better to the filling and baking process.

    More helpful tips for you.

    1. To keep the cookie dough from spreading, you can refrigerate it for 20 minutes or more before making this recipe. Also, try not to over-stuff the sliced croissants with cookie dough.
    2. The cookie dough filling in the croissants will still be slightly underbaked after 10 minutes baking time. Continue baking for longer if you prefer the cookie dough to be fully baked.
    3. You may have leftover cookie dough after making these cookie croissants. You can bake any leftover cookie dough as cookies or freeze the dough for another time. The dough will freeze perfectly in an airtight container for up to the months.
