- Butter. Use unsalted butter that is softened to room temperature.
- Sugar Alternative. Use a granular white sugar alternative that measures like sugar and that can also be baked with.
- Egg Your egg should be at room temperature.
- Vanilla Extract For a bit of flavor balance.
- Sugar Free Jello You will need just the dry gelatin and not the ingredients needed to actually make the gelatin.

- Jello. For the first section, add two teaspoons of the the first jello packet and knead the dough until combined. You can use food prep gloves to do this and you can add and additional teaspoon of gelatin if needed for color. Repeat this process with the remaining dough.
- Dough. Use a cookie scoop to scoop out the dough, roll the dough into a ball, and then place the dough balls on to your prepared baking sheet about two inches apart. Use the palm of your hand to flatten the balls to about ยฝ" tall.
- Bake Bake the cookies for 8-10 minutes or until the edges appear to be set. Then allow the cookies to cool on the baking sheet for five minutes before transferring them to a cooling rack to fully cool.

Tips for making the best Jello Cookies
Because sugar alternatives weigh differently from sugar, the sugar free packets of gelatin weigh less than regular Jello. It is best buy as much sugar free Jello to make 16 'servings' total or four .3 ounce boxes (which have four servings in each). Also, Make sure that your chosen gelatin is not sweetened with aspartame as aspartame does not bake well.

You can find sugar free gelatin online that has been sweetened with Splenda.
I also found a gelatin that has been sweetened with Stevia which may work for you as well.
