This recipe for Sugar Free Gelatin Cookies is a copycat version of that famous cookie recipe.
However, that recipe contains a gelatin product that contains sugar in it.
Sugar Free Gelatin Cookies
This recipe reminds me a lot of my Sugar Free Jello Frosting recipe.
That frosting recipe has been a popular one with my readers.
This recipe is based upon the cookie recipe that folks make using Jello.
If you are able to use Jello in a recipe, you will find that it offers a great and fun baking hack. Not only do you get the color from the jello, you also get the taste that comes with it.
Sugar Free Jello works great in my frosting recipe because it offer the taste and the color.
However, it also contains aspartame as a sweetener. If you are familiar with my sugar free baking guide, then you know that this artificial sweetener does not bake well due to its chemical composition.
However, there is a way to get around the sweetener issue and make a sugar free version of a Jello inspired cookie.
Like with the regular sugared cookie version, we will get that fun color with our sugar free cookies.
Also, we will get a fun taste with our cookies as well.
For this recipe, you will need a sugar free gelatin product that is sweetened without aspartame.
You can find sugar free gelatin online that has been sweetened with Splenda.
I also found a gelatin that has been sweetened with Stevia which may work for you as well.
When choosing a sugar free gelatin product, please read the label for best results.
Look at the label to see what kind of sweetener it contains (avoiding aspartame of course). Besides noting the color and taste, also make sure that there are no warnings that may affect you or your cookies.
Here are some tips to help you with your cookies.
To make this low carb, use a low carb all purpose flour.
Also, to make this keto use a keto all purpose flour.
Lastly, to make this recipe gluten free, use an all purpose gluten free flour.
Also, if you are using Almond flour, please add an additional egg to the batter to aid in the binding process. I suggest anyone using any of the all purpose flour alternatives check the packaging to see if an additional egg or other binder for gluten free baking is needed as well.
Here are a few more tips for your sugar free cookies.
- Separate the basic dough and add a different color gelatin to each half to make two different colored cookies. You can double the batter to make even more!
- Wearing food-safe gloves can help keep the color off of your hands.
- This cookie should work great with a cookie press too!
- Make sure that your chosen gelatin is not sweetened with aspartame as aspartame does not bake well.
There are several ways to top this cookie if you desire to.
Simply sprinkling some granular sugar alternative on top is one way to top this cookie. Another way top top this cookie is using a Sugar Free Royal Icing such as one of these.

As mentioned earlier, make sure that your chosen gelatin is not sweetened with aspartame. This is because aspartame does not bake well due to its chemical composition.

What you will need to make this recipe for Sugar Free Gelatin Cookies.
- All Purpose Flour- 3 ยฝ cups.
Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour.
Make this 'keto friendly' by using a keto friendly flour.
Please check the packaging to assure whether or not you will need a binder such as an additional egg. - Baking Powder- 1 teaspoon.
- Butter- 25 tablespoons. That is equivalent to 3 sticks + 1 tablespoon. You can find butter alternatives online. Please read the instructions for using the one that you have selected to use.
- Sugar Alternative- ยพ cup.
Please use a granular sugar alternative that measures 1:1 with sugar. Additional also if desired for sprinkling on top of the cookies. - Egg-1.
- Vanilla Extract-1 teaspoon.
- Sugar Free Flavored Gelatin - 1 four serving package. Depending on the product, that will probably be between 1.4 and 3 ounces. Most packets are for 4 to 4 ยฝ servings. You want one packet for this recipe.
How to make Sugar Free Gelatin Cookies
If you intend to make your cookies at another time or roll your cookies and use cookie cutters to make shapes, you can preheat your oven before you actually intend to bake your cookies. Also you can double the batch to divide it up just before adding the gelatin to get more than on color cookie.
Here is how to make this cookie recipe.
- Preheat your oven to 375.Prep your cookie sheets with Parchment Paper .
- In a small bowl, whisk together the flour and the baking powder. Set this bowl aside.
- Next, in a mixing bowl, cream together the butter and the sugar alternative.
- For the next step, we will add the dry ingredients from the first bowl to the mixing bowl. Do this by adding half of the dry ingredients at a time, stirring between additions. The stir in the egg and the vanilla extract. If you have chosen to double this recipe in order to make two batches, you can divide the dough in half now, placing one half in a new bowl.
- Stir in the gelatin until it is just mixed in.You can wrap your dough in plastic and place in the refrigerator if desired at this time. To bake as is, use a scoop or tablespoon to scoop out dough and then roll it into a ball. Place the ball on to the cookie sheet and then flatten (some folks use a cup or glass to flatten their cookies.)
- Sprinkle with additional granulated sugar and bake for 10-12 minutes or until the begin to turn golden around the edges. Allow the cookies to sit on the cookie sheet for a few minutes before transferring to a rack for cooling.
