Sugar Free Mexican Wedding Cookies
This recipe is for those of us who really love the idea of a Mexican Wedding Cookie but, do not want all of the sugar that comes with them.
Certainly I can relate with those people as I hate having to avoid eating something so yummy looking, that everyone else loves, just because it is covered in sugar.
This cookie is known for both its shape and the powdered sugar that covers it.
Besides all of that, this is actually a pretty basic recipe for a cookie. However, it is a popular cookie especially during the holiday season.
What makes this Mexican Wedding Cookie so popular is probably the powdered sugar that is used to make it with.
But, since we are making a sugar free cookie, we will not be using regular powdered sugar in the recipe.
The good news is that there are sugar free options for powdered sugar that we can use in this recipe.

You may be asking if Mexican Wedding Cookies really are Mexican.
Well, yes this is a very popular cookie to eat in Mexico. These cookies are known as a polvorones in Mexico and are especially popular during the holiday season.
You may also be wondering if Mexican Wedding Cookies are the same thing as Snowballs or Russian Tea Cakes.
To the eye, these cookies all look the same, they are round and covered in powdered sugar.
You may not be surprised to also hear that these cookies are made with the same basic ingredients as well. It is fair to say that all of these powdered sugar cookies are especially popular during the holiday season too.
This cookie is known not just for its white powdered sugar coating but, also for its nutty taste.
While you could probably use about any nut in your Mexican Wedding Cookies, there are some nuts that are used more than others in this recipe. Some folks will even use more than one kind of nut for an even more exciting cookie taste.
The standard nuts that are used in most recipes for this cookie are pretty common ones.
I like a pecan nuts in this recipe. However, almonds or walnuts or even a combination of these choices are all good tasting bets in this cookie.

- While shaping these cookies into a ball is the standard, consider other shapes such as a crescent shape.
- Coating your hands with additional flour or lightly oiling them can help minimize any stickiness of the cookie batter when you are forming your cookies into shapes.

What ingredients you will need to make these Sugar Free Mexican Wedding Cookies
- Butter- 1 cup + 1 tablespoon (17 tablespoons total) softened to room temperature.
- Granular Sugar Alternative- ½ cup equivalent to sugar. Please use a granular sugar alternative that measures 1:1 with sugar.
- Vanilla Extract- 2 teaspoons.
- All Purpose Flour- 1 ¾ cups. To make this low carb, use a low carb all purpose flour. Also, to make this keto use a keto all purpose flour. Lastly, to make this recipe gluten free, use an all purpose gluten free flour
- Nuts- 1 cup chopped. I like a pecan nuts in this recipe. However, almonds or walnuts or even a combination of these choices are all good tasting bets in this cookie.
- Sugar Free Powdered Sugar- ½-3/4 cup. You can make your own sugar free powdered sugar using this recipe or you can buy sugar free powdered sugar already made online.
How to make Sugar Free Mexican Wedding Cookies
- If baking now, preheat your oven to 300 and line your cookie sheets with parchment paper.
- Start by creaming together your softened butter with the granular sugar alternative at a low speed in a mixing bowl. Then blend in the vanilla extract.
- Next, we will add the flour to the mixing bowl. It is best to do this by adding half of the flour at a time, mixing gently between additions. Then you can fold in the chopped nuts.
- For this next step we will shape the cookies into balls (or other shape such as crescent) and place the cookies onto the prepared cookie sheets. Tip: use a tablespoon to scoop out the cookie dough to make your cookie size consistent. Also, if your cookie dough seems to be a bit sticky, you can coat your hands with a bit of flour or oil.
- Bake for 18-20 minutes and allow to cool on a cookie rack, When cooled, roll the cookies in the powdered sugar to coat them.
