Tips for making the best Island Inspired Cookies.
Using fresh ingredients is essential to the success of this recipe. This includes your dry and wet ingredients.
More helpful tips for you.
- For more of a Tropical Island Cookie you can add a half teaspoon of lime zest and swap out the walnuts with equal amounts of macadamia nuts.
- When combining your wet and dry ingredients together, do no over mix your ingredients. Doing so can ruin the texture of your soft cookies.
- When selecting your sugar alternatives, select alternatives that measure like regular sugar and that can also be baked with.
- Refrigerating your dough, for at least 20 minutes, can help prevent the cookies from spreading too much during baking.
- Use a cookie scoop to scoop out the dough and keep the cookies a uniform size.
- Avoid overbaking your island cookies as overbaking can make them dry and crumbly. Your cookies are done baking when the edges are lightly golden brown.

- Dry Ingredients. In a medium bowl, use a whisk to combine together your flour and baking soda. baking powder, and optional salt.
- Cream. Outfit your mixer with a paddle attachment. Beat together your butter with your sugar alternatives on medium speed until smooth and a little fluffy (about two to three minutes). Then add the vanilla extract and egg and beat on medium speed until just combined.
- Combine. Scrape down the sides of your mixing bowl and then set your mixer on low speed and gradually add the dry ingredients from the first bowl to the mixing bowl, mixing until just combined (do not over mix).
- Fold. Use a rubber spatula or similar item to fold in the white and regular chocolate chips, coconut and walnuts. Note that the batter will be thick so it may take longer than you are used to to fold in the ingredients until they are evenly distributed.
- Scoop. Use a small cookie scoop or tablespoon to drop the cookie batter on to your prepared baking sheet leaving about an inch and a half between cookies (they will spread while baking).
- Bake Bake your cookies for eight to 10 minutes or until the edges are slightly crisp and the cookie looks โdryโ.
