Tips for making the best chocolate chip oatmeal muffins.
Old fashioned (rolled) oats work best in this recipe as they hold their shape well when baked while providing that hearty chewiness we love in an oatmeal muffin. Quick or instant oats will work, but they tend to produce a denser, less-chewy muffin because they absorb liquid more quickly.
More helpful tips for you.
- Soaking the oats in the first step is done to soften the oats which results in a more creamy, moist, and tender muffin.
- For added texture and flavor, you can sprinkle some chopped walnuts on top of your muffins before you bake them.
- These muffins are baked through when they can spring back when lightly touched in the center. Alternatively, you can use the toothpick test however, the melting chocolate chips may give you a false result.
