    Ingredients needed to make orange creamsicle cake with no added sugar.

    This recipe is made in three layers. The cake layer, the filling layer, and the topping layer.

    Cake layer.

    • Sugar Free Cake Mix White cake mix is preferred however, yellow cake mix can be used.
    • Sugar Free Instant Vanilla Pudding Mix. This is used to make the cake even more moist. A keto low carb pudding mix can alternatively be used.
    • Greek Yogurt. This is used as to help with the moist texture in the cake and to assist in the rising in the cake. Use a plain or orange flavored yogurt.
    • Water. You can use the amount indicated on the cake mix box or one cup if that is not indicated.
    • Eggs. Use large eggs that are at room temperature. If your mix uses an amount different than mine (three) you can use that amount instead.
    • Vegetable Oil. Also added for moisture. Again, if your mix calls an amount different than mine (a half cup) you can use that amount instead.
    • Orange Zest. Freshly zested orange is preferred.

    For the poke filling layer.

    • Sugar Free Orange Gelatin. Use a four serving package, these are usually around .3 ounces
    • Boiling Water and Ice Water. Used in making the gelatin firm.

    For the topping layer.

    • Heavy Whipping Cream Used to make the whipped topping. This should be cold.
    • Sugar Alternative. Use a granular sugar alternative that measures like sugar.
    • Milk. Whole milk has a better structure for the topping.
    • Sugar Free Instant Vanilla Pudding Mix Use a packet that makes four ยฝ cup servings.
    • For garnishing, you can use orange or mandarin orange slices.

    Tips for making the best creamsicle poke cake.

    White cake mix in typically what is used to make this kind of recipe with. You can use a sugar free yellow cake mix if you cannot find a white cake mix with no added sugar or I have a Sugar Free White Cake Recipe here.

    More helpful tip for you.

    1. This recipe is really easy to make when you follow the steps one at a time. There are three parts of this recipe with simple to follow steps in each.
    2. Water is used in making the cake portion of this recipe. For more flavor you can use orange juice for part or all of the water instead. Freshly squeezed orange juice is preferred as it will not have added ingredients such as sugar.
    3. Feel free to make your cake portion of this recipe according the directions on the cake mix packaging using the indicated ingredients. What you should know is that while following the packaging is the simplest way to go, my cake recipe is more moist and has a texture that can hold up to being poked into .
    4. The best holes in a poke cake come from the spoon handle from a wooden kitchen spoon.
    5. Add the Jello to the holes immediately after it has thickened yet, is still pourable so that it does not fully solidify until it is in the holes that are in the cake.
    6. For the whipped topping, pour the heavy cream into the mixing bowl and then place the bowl into your freezer for 30 minutes prior to making it.

    How to make Sugar Free Orange Creamsicle Poke Cake

    Prep Time: 20 minutes .
    Bake Time: 30 minutes.
    Chill-set time: 3 hours.
    Servings: 12, depending on how the cake is cut.

    1. Preheat your oven to 350 and prep a 9X13 baking pan or dish for nonstick. I like to use parchment paper for a recipe such as this one for both an easier cake removal and clean up .
    2. In a large mixing bowl, combine together the cake mix, pudding mix, yogurt, water, eggs oil, and orange zest. Mix until just combined and than transfer the batter to your prepared baking pan or dish, evenly spreading the batter as needed.
    3. Bake the cake 30-38 minutes (a baking pan will bake faster than a dish) or until an inserted toothpick comes out clean. Then allow to the cake cool on a cooling rack for 10 minutes.
    4. To poke the holes in the cake, use the round handle of a wooden mixing spoon. Poke the holes in the cake, making the holes about a half inch apart and two thirds of the way into the cake (not all the way through the cake).
    5. For the Jello layer used to fill the holes with, start by using a whisk to combine together the dry mix with the boiling water (carefully) in a medium bowl. Once the dry mix has been fully dissolved into the water you can whisk in the ice water. Then allow the mixture to sit for 10 minutes to thicken a bit.
    6. Carefully pour the mixture over the poked holes in the cake, making sure that it gets into all of the poked holes. Then cover and refrigerate the cake for three hours to set.
    7. To make the topping layer, add the cold whipping cream (if you have not already) to the cold mixing bowl along with the sugar alternative.
    8. Beat the ingredients on medium-high for about two minutes or until it is thick and spreadable. Do not overbeat, or it can turn to butter.
    9. Next, in a medium sized mixing bowl, whisk together the milk and the pudding mix until thickened (this can take up to a few minutes). Then use a rubber spatula or similar item to fold the whipped cream into thickened pudding mixture.
    10. Use an offset spatula or rubber spatula to evenly spread the topping over your cake.
    11. Add any oranges for garnishing to the top of the cake and refrigerate to set the cake before serving.

    Expert Tip๐Ÿ‘‰ Poke the holes about an inch and a half apart from one another. When the holes are too close together, the structure of the cake can be affected.

    Once the cake has fully set, it can be stored in an airtight container. When properly stored and refrigerated, this cake should keep for about five days.

    Instructions

    Cake.

      I was looking for a good poke cake recipe that would be low on sugar. This works great. I used a regular jello and it turned out great.
