Ingredients needed to make Key Lime Bars.
This is a three layer recipe. There is a crust, a filling, and a topping.
- Almond Flour. Used, instead of graham cracker crumbs, for the crust.
- Butter. You butter should be melted.
- Sugar Free Powdered Sugar. Sweetens the crust.
- Egg Yolks. Your yolks should be at room temperature.
- Key Lime Juice. Use freshly squeezed limes as bottled juice often has added sugar in it.
- Sugar Free Condensed Milk. If you use coconut milk, use a full fat for texture.
- Lime Zest Use freshly zested key limes optimal flavor.
- Vanilla Extract. Added for a bit of flavor balance.
- Heavy Cream. For the topping.
- Sugar Free Powdered Sugar. Also used in the topping.

Tips for making the best key lime bars.
When selecting key limes to use, look for limes that are fresh and good condition. Avoid limes with bruises or that are soft.

- While my bars are made with key limes, you could alternatively use regular limes.
- Using parchment paper to line your baking dish is recommended. The parchment paper should overhang the sides of the dish to make it easier to slice the bars and and clean up.
- Yes, these bars look a bit yellow and not the usual green that you would expect. Yellow is actually what the bars should be and the usual green is often due to added coloring.
- Your bars will be done baking when the edges are set. The center will still be a bit jiggly but, will set while the bars cool.
- When you make the whipped topping, use a bowl that has been chilled for best results.
- You can sprinkle additional key lime zest over the whipped cream for extra flavor and a pop of color.
How to make Sugar Free Key Lime Bars
Prep Time: 15 minutes .
Bake Time: 30 minutes .
Chill Time: 2 hours
Servings: 9 squares, depending on how they are cut .
- Preheat your oven to 350 and prep a square baking dish with parchment paper. A 9X9" pan was used to make my bars.
- To make the crust, combine together the almond flour, powdered sugar alternative, and the melted butter in a bowl. Then press the mixture firmly into the bottom of your prepared pan to form an even crust.
- Bake the crust in your preheated oven for 10-12 minutes or until the crust is set and lightly golden brown. Allow the crust to cool while you prepare the filling layer.
- For the filling, whisk together the egg yolks, unsweetened condensed milk, key lime juice, key lime zest, and vanilla extract until well combined. You can do this by hand or use a whisk attachment.
- Pour the whisked filling ingredients over the slightly cooled crust, evenly spreading it out as needed.
- Return the pan to the oven and bake for an additional 18-20 minutes, or until the filling is set. You can check for doneness by gently shaking the pan – the center should be slightly jiggly but not runny.
- Place the baking pan on a wire cooling rack and allow the bars to cool completely in the pan on a wire rack. Then refrigerate the bars for at least two hours to set the filling fully.
- To make the whipped topping layer, in a chilled mixing bowl, whip the heavy cream and powdered sugar alternative until stiff peaks form. Then evenly spread the whipped cream over your chilled key lime bars.

These bars should be stored in an airtight container. When properly stored, they should keep for up to four days refrigerated.
