- Flour. Regular all purpose flour
- Baking Powder and Baking Soda for leavening.
- Butter. Your butter should be softened to room temperature. If you are using unsalted butter you can add a half teaspoon of salt to your flour.
- Unsweetened Peanut Butter. Use creamy peanut butter that is not 'organic'.
- Brown Sugar Alternative. Select an alternative that measures like regular brown sugar and that can also be baked with.
- Banana Use a ripe banana that has been mashed.
- Sugar Free Chocolate Chips. I like semi sweet baking chips for this recipe.
How to make Sugar Free Peanut Butter Banana Cookies

- Prep Time 20 minutes .
- Bake Time 12 minutes .
- Servings 30 cookies .
- How to serve : Serve with milk, coffee, or the beverage of your choice.
- Notes: You will need bowls, a rubber spatula or similar item, whisk, baking sheet, parchment paper, and a medium sized cookie scoop for this recipe.
- Prepare. Preheat your oven to 350℉ . Also, prep your baking sheet(s) for nonstick. Parchment paper or a baking mat should work.
- Dry Ingredients. In a medium bowl, use a whisk to combine together the flour, baking soda, and baking powder.
- Cream In a large mixing bowl, cream or beat together the butter, peanut butter, and sugar alternative until cream. Then scrape down the sides of the bowl and stir in the mashed banana.
- Combine. Add the dry ingredients from the first bowl to the mixing bowl and mix until just combined. Then fold in the chocolate ships.
- Scoop. Scoop out the cookies and place them about an inch and a half apart from one another on your prepared baking sheets. You can press in additional chocolate chip cookies if desired at this time.
- Bake. Bake the cookies for 10-12 minutes or until the bottoms of the cookies appear to be turing golden brown.
- Cool. Allow the cookies cool on the baking sheets for five minutes before transferring to a cooling rack to fully cool.

Using ripe bananas is essential for this recipe. The more ripe or overripe the better! Not only will they be soft and able to blend with the other ingredients effectively, they will add more flavor to your cookies.

- When you mash your banana, mash it until it is just broken down. An over-mashed banana can make the dough sticky and flat as there will be excess liquid released from the banana.
- When you are selecting your peanut butter, I would suggest avoiding the 'natural' ones. Sometimes natural peanut butters with have added oil in them which can make your cookies too oily to enjoy.
- After placing the scooped cookie dough onto the prepared baking sheets, you can use the palm of your hand to gently press them down to flatten the tops. These cookies are meant to have texture to them so try to avoid pressing them down too much.

Once your cookies have fully cooled and set, they can be stored in an airtight container. When properly stored, these cookies should keep for up to a week at room temperature of frozen for up to a couple of months.
