Sugar Free Pumpkin Bars
This is the version of that popular fall pumpkin recipe that does not have a bunch of sugar added to it.
As you probably suspected, pumpkin bars in general seem to have sugar added to them in order to make them taste sweeter.
This is certainly not to say that pumpkin needs sugar added to it to taste better.
However, since pumpkin bars tend to be a fall dessert or treat, a sweet taste is probably expected from them. Hence, sugar is added to the typical pumpkin bar recipe.
I will say that pumpkins do come with their own sugar.
That sugar is naturally in the pumpkins. However, there are only three grams in a cup of the average pumpkin.
Pumpkins do have some nutritional value that may surprise you to know about.
Not only are pumpkins fat free, they are also relatively low in net carbohydrates. However, they also pack a punch with Vitamin A along with having Vitamin C in them.
There are a few ingredients that you may need to purchase for this recipe.
Obviously, you will need to use pumpkin to make these bars. This recipe calls for pumpkin puree, which you can easily find online.
You have the option of frosting the bars as well.

This recipe calls for all purpose flour.
You do have options for flour substitutions if you are looking to not use all purpose flour.
To make this low carb, use a low carb all purpose flour.
Also, to make this keto use a keto all purpose flour.
Lastly, to make this recipe gluten free, use an all purpose gluten free flour.
Also, if you are using Almond flour, please add an additional egg to the batter to aid in the binding process. I suggest anyone using any of the all purpose flour alternatives check the packaging to see if an additional egg or other binder for gluten free baking is needed as well.
The remaining ingredients in this bar recipe are pretty standard cake bar ingredients.
For the sugar replacement, I am suggesting that you go with a granular sugar alternative that measures 1:1 with sugar. You can find this kin of a
granulated Sugar Alternative online.

What you will need to make this recipe.
- All Purpose Flour- 2 cups. I mentioned above, make this lower in carbs, use a low carb all purpose flour. Make this keto friendly by using a keto all purpose flour.
- Baking Powder- 2 teaspoons.
- Baking Soda- 1 teaspoon.
- Ground Cinnamon (no added sugar) - 2 ยฝ teaspoons.
- Granulated Sugar Alternative- 1 ยฝ cups. Please use an alternative that measures 1:1 with sugar for best results.
- Vegetable Oil or Canola Oil- 1 cup.
- Pumpkin Puree - 1 fifteen ounce can.
- Eggs- 4.
- Vanilla Extract- 1 teaspoon.
How to make Sugar Free Pumpkin Bars
- Preheat your oven to 325 and prep a rimmed baking sheet for nonstick. (I use Parchment Paper ).
- In a medium bowl, whisk or sift together the flour, baking powder, baking soda, and ground cinnamon. Set this bowl aside.
- Next, in a mixing bowl, blend together the sugar alternative, oil, and pumpkin puree. Then add the vanilla and then the eggs, one at a time, gently stirring between additions.
- For the next step, we will add the flour mixture from the first bowl to the mixing bowl. Do this by adding half of the mixture mix for five to ten seconds and the add the remaining.
- Bake this for 30-35 minutes or until the edges begin to brown. Allow this to cool before adding frosting.
