What you need to make to make Ranger Cookies with no added sugar.
- Flour. Regular All Purpose Flour was used to make my cookies..
- Leaveners Baking Soda and Baking Powder
- Rolled Oats Gives these cookies that chewy texture.
- Butter. Softened to room temperature. If you are using unsalted butter you can add a half teaspoon of salt to the flour.
- Sugar Alternatives. Brown Sugar Alternative and White Sugar Alternative. Select granular sugar alternatives that measure like sugar and that can also be baked with.
- Eggs. Use large eggs at room temperature.
- Vanilla Extract. For Flavor.
- Corn Flakes. Crushed. You can alternatively use an unsweetened cereal of choice.
- Sugar Free Chocolate Chips for baking Semi Sweet or Milk Chocolate work well in this recipe.
- Unsweetened Shredded Coconut For flavor and texture. This can be omitted.
- Optional Add Ins Raisins (½ cup) or Chopped Nuts (1 cup) .
How to Make Ranger Cookies Without Sugar

- Prep Time 15 Minutes .
- Bake Time 10-12 Minutes .
- Servings 24 .
- How to serve : Serve these cookies as is with milk, coffee, or the beverage of your choice.
- Notes: You will need a baking sheet, parchment paper or a baking mat, whisk, mixing bowls, whisk attachment , rubber spatula or similar item, and a cookie scoop to make this recipe.
- Prepare. Preheat your oven to 350°F. Prep your baking sheets for nonstick. Parchment paper or a baking mat should work in this recipe.
- Dry Ingredients. In a medium bowl, use a whisk to combine together the flour and leaveners (baking soda and baking powder).
- Cream. In a large bowl, use a whisk attachment to beat together the sugar alternatives and butter on high speed until fluffy and smooth. Then add the eggs and vanilla extract to the mixing bowl and beat until combined.
- Combine Set the mixer speed to low and slowly add the dry ingredients from the first bowl to the mixing bowl, mixing until just combined.
- Fold Lastly, use a rubber spatula or similar item to fold in the oats, crushed flakes, chocolate chips, and coconut.
- Scoop Use a cookie scoop to scoop out the cookies and then place them on to your prepared baking sheet about two inches apart from one another.
- Bake. Bake the cookies for 10-12 minutes. Your cookies will be golden brown around the edges and the center should still look a little soft.
- Cool Allow the cookies to cool on the baking sheet for at least 10 minutes for the centers to set. Enjoy warm or transfer to a cooling rack to cool completely.

Tips for making the best Ranger Cookies
The oats that are added to these cookies play an essential part in the texture of these cookies. Make sure that you re using rolled or old fashioned oats and not quick oats for this recipe.
More helpful tips for you.
- While not essential, you can refrigerate the cookie dough before scooping (or after scooping) out the cookies. This will help the cookies spread less while baking. The dough can be refrigerated from 30 minutes to a day in advance.
- Using a cookie scoop will make the cookies more uniform in size. This will allow them to baked evenly and at the same time. If you scoop gets sticky, you can spray it with a bit of nonstick.
- Avoid over-baking these cookies as doing so can affect the texture. You want the middle to be soft and chewy. It may appear unbaked when you take them out of the oven but they will firm up as they cool a little.

Once your cookies have fully cooled they can be stored in an airtight container. When properly stored, they should keep for up to four to five days at room temperature or frozen for up to a few months.
