- Egg Whites Your egg whites should be at room temperature.
- Salt A small amount of added salt is needed in this recipe.

You can take these cookies up a notch by toasting the cereal before adding it to this recipe. Simply toast the cereal on a rimmed baking sheet at 350°F (175°C) for 10-minutes. Toasting the cereal dries it out which limits it from soaking up moisture from the dough and results in the cookies staying crunchy for days longer.

- The second step in this recipe calls for beating the ingredients until stiff peaks form. When stiff peaks form you should be able to lift the beaters with the peaks standing straight up without drooping. The mixture should look smooth.

When properly stored, the cookies should keep for up to five days at room temperature, or frozen for up to a few months. If storing in layers, there should be parchment paper of wax paper placed between the layers. Frozen cookies should be thawed at room temperature for about an hour before enjoying.
