- Vanilla Extract
- Salt. A small amount of salt is used to help prevent ice crystals from forming and to help bring out the flavors in the ice cream.

- Notes: You will need a high speed blender or a good mixer to make this recipe. My ice cream was made in a mixing bowl with a hand mixer.
- Prepare. Start by placing your loaf pan into your freezer to get it cold while you work. Also, outfit your mixer with a whisk attachment
- Avocados Prepare the avocados by removing the skin and the pit. Cutting the avocados in half and scooping out the meat is an easy way to do this. Then place the avocado into your high speed blender or mixing bowl.
- Beat or Mix Add the remaining ingredients to your blender or mixing bowl and beat or mix the ingredients until the mixture becomes thick and light green, with no clumps of avocados (about four to five minutes).
- Transfer. Transfer the ingredients from your mixing bowl or blender to the loaf pan that you placed into your freezer in the first step. You can use the backside of a large spoon or rubber spatula to evenly smooth the ice cream out.
- Freeze. Cover your loaf pan with plastic wrap and freeze the ice cream until set (about six hours to overnight).
- Serve. Thawing the ice cream for 10-20 minutes in your refrigerator or counter top can help make this ice cream easier to scoop.

Tips for making the best avocado ice cream
It is important that the avocados are ripe and soft. If the avocados are not ripe and soft there can be clumps leftover in the ice cream which tend to freeze harder than the ice cream. Also be sure the insides of the avocado are yellow/green (light or dark green), and NOT brown - this is where the color of the ice cream comes from.
More helpful tips for you.
- Unlike other kinds of ice cream, this one is easier to scoop when it is allowed to thaw before serving. This is because the avocado fat freezes harder than other kinds of fat. adding that pinch or so of salt to mixture helps to prevent this.
- You will know then your ice cream is done mixing when the texture is like a thick whipped cream. You will need to mix the ingredients well.
- Like with about anything else made with avocados, ice cream can turn brown when exposed to air.
You can prevent this by adding a tablespoon or so of lime or lemon juice to help prevent browning.

Nope. Trust me on this one. This ice cream really tastes more like the heavy whipping cream accented by the vanilla extract. - How can I make this recipe vegan? Swap out your heavy whipping cream with full-fat coconut milk.
