This easy recipe for Low Carb Cheddar Cheese Biscuits will really impress you.
Not only is this a recipe that is low in carbohydrates, it is also a yummy one to eat!

Low Carb Cheddar Cheese Biscuits

Low Carb Cheddar Cheese Biscuits

This is for those of us who love our biscuits and do not want to give them up just because they could have cabs in them.
Luckily, we do have alternatives when it comes to baking. YAY!!

I should also mention that this recipe is more of a wholesome biscuit recipe.
If you are looking for an Old Bay or 'copycat' Red Lobster kind of biscuit, that is low in carbs, I have you covered. Here is a really popular recipe for Low Carb Copycat Red Lobster Biscuits.

This is not like any low carb biscuit recipe.

I like to think of this as a biscuit recipe that celebrates the great taste of cheddar cheese. It is the cheddar cheese that really provides the flavoring for this as opposed to the seasonings providing the taste.

This is a great low carb biscuit idea to serve at any meal.
I say this because this biscuit does not taste heavy on the seasonings. Instead, the cheddar cheese is what dominates.

Here is how we will make these low carb biscuits flaky.

I am a fan of a flaky biscuit, as I must state upfront. Flaky biscuits do not just happen naturally. They are a result of a simple hack.

We will use cold ingredients to make that flaky, or layered, texture with these biscuits.
Using cold ingredients helps slow down the melting, or blending, from the butter when we bake our biscuits. As a result, we get those nice layers. YUM! I will share a few more tips in a moment.

We will make low carb self rising flour for this recipe.

That is, we will use low carb all purpose flour such as one of these. Also, we will use baking powder (please make sure that your ingredients are fresh for best results).

The other ingredients in this biscuit recipe are quite predictable.
This recipe calls for heavy cream, which nets about 7 grams total for this recipe. It is also a great source of moisture in this recipe as well.

I have a few tips about how to make biscuits to share with you.

  1. Freezing the butter before using it in this recipe will make the better for cutting with the dry ingredients. You can then remove the butter from the freezer and use a grater on it for this recipe.
  2. Mix your ingredients until just blended. Over-mixing can lead to dense or heavy biscuits.
  3. Make sure that you are using fresh ingredients (especially the dry ones!). Old ingredients can affect the outcome of your biscuits.
  4. You could make these biscuits in advance. Simply freeze the biscuit dough and bake them when you are ready to serve them.
  5. Use a round cookie cutter to cut your biscuits in a round shape. Flour or lightly spray with nonstick that cookie cutter to avoid having to twist it around too much while cutting.
  6. Since these biscuits are made with cheese, I suggest that store them in the refrigerator to make them last longer.
  7. Using a sharper cheddar cheese rather than a mild version is a good way to make this biscuit more favorable.
