This recipe is a great alternative to the usual carbohydrate filled burger bun that your probably already know about.
Low Carb Gluten Free Buns
It seems like it was a forever ago, if that is such a thing, that I was new to the low carb diet and I was looking for the perfect kind of bun that I could use to hold my hamburgers inside of. I was clueless at the time that there is actually an easy way to make an acceptable bun.
Instead of using a bun, I would wrap my yummy looking burgers in a wrap.
There really are some yummy low carb wraps that you can use to wrap your burger inside of. I would suggest using toothpicks however, to help hold the burger in place.
Using a low carb tortilla wrap works well for wrapping your hamburger inside of.
However, sometimes you just need to have a burger bun just to make that burger look more authentic. This burger bun, albeit lower in carbs than the usual, is much more filling than the wrap is as well.
There really are a few ways to go about making the perfect bun for your burger.
A while back I posted an easy and low carb mug bread recipe. That keto low carb mug bread recipe would make for one great low carb bun for one, for example.
Making a keto low carb bun for one is easy enough to do.
But, if you need to make more than one bun, this recipe may work better for you.
Both buns are delicious choices for your burger even though they are two different recipes.
This recipe is based upon the famous 'fathead' bread recipe.
I am not sure exactly how this kind of dough originated however, I can assure you that it does contain some of the more used low or no carbohydrate ingredients in it.
Here are a few of the ingredients that you will need to make this kind of of hamburger bun.
Almond flour is a the low carb flour of choice in this recipe. It is also a gluten free flour. Look for a blanched almond flour for best results.

Trader Joe's Everything but the Bagel .
This is my favorite seasoning for a recipe like this one. However, I do not live by a Trader Joe's so I have to either buy it online or load up when I am at a Trader Joe's. Obviously, I do both 🙂 .
Trader Joe's Everything but the Bagel
A Remarkable Seasoning blend for Bagels, Toast or other favorite food ideas!
Ingredients: sesame seeds, sea salt flakes, dried minced garlic, dried minced onion, black sesame seeds, poppy seeds.
This is one of the best keto low carb bun recipes that I have found.
The dough takes a bit of practice to work with as it lacks gluten and can be a bit sticky (oiling your hands can help). However, I did find some already made low carb buns online if you just want to buy them already made (I have not tried these).

As mentioned, you will need a low carb flour for this. Almond flour is a the low carb flour of choice in this recipe. It is also a gluten free flour. Look for a blanched almond flour for best results.

What you will need to make this
- Almond Flour- 3 cups. Only substitute almond flour with a flour that is 1:1 in volume with almond flour. Generally speaking, most coconut flour is not 1:1 with almond flour. However, Carbalose Flour is low carb and can be used in this recipe.
- Baking Powder- 3 teaspoons.
- Mozzarella Cheese- 2 cups shredded.
- Cream Cheese- 4 ounces (cream cheese usually comes in an eight ounce bar. Simply use half of that.) Have this cheese softened to room temperature for best results.
- Eggs- 3 beaten.
- Butter- 4 tablespoons melted. You can try using olive oil as a substitute. I have not tried it however.
- Seasonings/toppings of choice. Such as Trader Joe's Everything but the Bagel - as needed.
How to make Low Carb Gluten Free Buns
- Start by preheating your oven to 375 and prepping a baking sheet for nonstick. I prefer to use parchment paper.
- Whisk or sift together the almond flour and the baking powder. A whisk will probably work better than your average sifter because almond flour granules can be a bit large in comparison to AP flour. Set this aside.
- Next, in a microwave safe bowl, melt together the mozzarella and cream cheeses. I suggest microwaving at 15 second intervals and stirring between each until melted together.
- In a larger mixing bowl, mix together the eggs and the flour mixture from the first bowl. Next, stir in the microwaved ingredients into the large mixing bowl with the other ingredients.
- You will need to form your dough into individual sized balls. You will be able to make between six and eight. If the dough seems sticky, try oiling up your hands a bit to make it easier to handle. Then place each of the balls on to your prepped baking sheet and flatten.
- Lastly, brush the buns with your butter and season with the toppings of choice. Bake for 12-15 minutes or until they begin to turn golden.
