    This is a low carb version of a favorite meal.
    However, this recipe does not have all of the added carbohydrates in it.
     

    This is basically a baked pastry that has stuffing in it.
    You have probably eaten similar foods.
    The idea of the Calzone is a lot like am Empanada.

     

    Empanadas are popular in Latin-American countries.

    However, they can be found just about anywhere it seems.
    What may differ is what is inside of them.

    Beef is one popular food to stuff inside of an empanada.
    The beef is first cooked and then placed inside of the empanada before baking it. You could also go without the beef and perhaps, use just cheese or even a ground poultry instead.

    Because this is basically a pastry, there are some helpful tools that you could use for this recipe.

    One that I use for this, and in a lot of other recipes, is the small rolling pin.

    Two rollers - There are two pieces of pastry rollers in the shape of T and H. The H roller is designed for adults, fit for making pizza, cakes, bread, etc. The T roller is appropriate for children, which can offer them a unique experience of cooking
    Easy to use – The wooden rollers are in the perfect balance. In addition, they are smooth; so they can roll easily and you can save your strength as well
    Wide application - The rollers can be used to make pizza dough, pie crust, egg tart, cookie, noodles and more
    Material - The rollers are made of stainless steel and natural beech, free from oil paint, wax, pollution or smell. They have natural color of wood, smooth, sturdy and durable.

    Also needed for this recipe is the pastry portion.
    This is what we will use to stuff our empanada filling into. Because this is a low carb recipe, you will need to make a batch of my Keto Low Carb Flatbread recipe to use in this recipe. Simply make the dough without baking it until you are instructed to in the recipe below.

    As mentioned, one gadget that I find to be helpful for this, and in a lot of other recipes, is the small rolling pin.
    What you will need to make this Low Carb Keto Empanadas
     
    Because this is a low carb recipe, you will need to make a batch of my Keto Low Carb Flatbreadrecipe to use in this recipe. Simply make the dough without baking it until you are instructed to in the recipe below.

    • Keto Low Carb Flatbread- 1 batch
    • Olive Oil- 2 tablespoons divided.
    • Ground Beef or Turkey- 1 pound.
    • Tomato Paste- 2 tbsp
    • Seasonings
    • Garlic- 4 cloves minced or chopped
    • Egg- 1 large.
    • Water- 1 tablespoon.

    How to make Low Carb Keto Empanadas

     

    • Make the Keto Low Carb Flatbread as described in the recipe directions. Cut the dough into circles but, do not bake. Instead, flatten out the circle with a rolling pin on a sheet of parchment paper to prevent sticking and to make it easier to work with later on. You can refrigerate the flattened circles while you work if needed.
    • Tip: Line a couple of baking sheets with parchment paper and work on that when you flatten and fill your dough circles rather than having to move the empanadas later on.
    • Start your filling by browning your ground turkey or beef with one tablespoon of the olive oil in a large skillet over medium heat. Once it has browned you can drain the meat and remove it from the skillet. I like to transfer my meat to a bed of paper towels while I work in order for it to drain.
    • Return the empty skillet to the stove and add the remaining olive oil. Place the garlic in the skillet and cook for 2-3 minutes for the garlic to soften. Then add the tomato paste and seasonings. Cook this for an additional five minutes and then stir in the drained meat from the last step. Turn the heat down to low to low medium and cook until the ingredients have blended together- about five to eight minutes.
    • Add one to two tablespoons of the meat mixture (the amount depending on how big your circles are) to the center of each circle of dough. Do not overfill your circles. Fold the circle of dough in half. Use a fork or similar tool to flatten the edges together to keep the filling inside of the empanada while it bakes.
    • When ready to bake, preheat your oven to 375. Whip together the egg and water and then brush it on to the empanadas trying to avoid brushing the mix on the edges.
    • Bake for 15-20 minutes or until lightly browned and rotating halfway. Allow these to cool before serving.

    Ingredients

    • 2 tbs Olive Oil divided
    • 1 lb Ground Beef
    • 2 tbsp Tomato Paste
    • 4 cloves Garlic minced
    • 1 Egg
    • 1 tbsp Water

    Instructions

    • Make the  Keto Low Carb Flatbread as described in the recipe directions. Cut the dough into circles but, do not bake.
