- Dry Ingredients. In a medium bowl, use a whisk to mix together the flour, baking soda, and ground cinnamon. Set this bowl aside.
- Wet Ingredients. Next, in a large mixing bowl, beat together the butter with the sugar alternative until creamy. Then mix in the egg and the vanilla extract.
- Combine. Add the dry ingredients from the first bowl to the large mixing bowl and mix until just combined. Then use a rubber spatula or similar item to fold in the oats and the raisins.
- Scoop. Use a medium cookie scoop to scoop the cookie dough and then place the cookies on to your prepared baking sheet(s) about one and a half to two inches apart. You can use the palm of your hands to slightly flatten the cookies if needed
- Bake. Bake your cookies for 8-10 minutes or until the edges begin to brown. Then remove the baking sheets from your oven and let the cookies sit for about five minutes before transferring them to a cooling rack to fully cool.
Expert Tip ๐ Your cookies will be soft in the center when you take them out of the oven. The centers should set while the cookies are cooling on the baking sheet. Overbaking these cookies will dry them out making them crumbly and not chewy.
