- Nut Butter. Really any kind of nut butter can work in this recipe. I would however, use one that has no added sugar.

Tips for making the best no bake brownies.
Medjool dates are used in this recipe as they are similar to caramel in flavor and in their ability to be 'sticky', which is how they will hold the ingredients together. Use fresh dates that have had their pits removed.
More helpful tips for you.
- If your dates seem kind of dry you can soak them in hot water for 15-20 minutes to soften them up (drain before adding them to this recipe).
- A food processor is used to combine together the ingredients in this recipe. Certain good blenders may also work if you do not have a food processor.
- Walnuts are used for a bit of crunch and flavor. Since the walnuts used in the base will be added to the food processor, they do not have to be chopped however, walnut halves can make this recipe easier to work with. The walnuts added to the ganache should be chopped into smaller pieces.
- A double boiler is used in making a smooth ganache rather than using the microwave or simple pot method. I have included instructions on how to use a double boiler listed below the instructions.
- Maple syrup is used as a sweetener and for flavor. If you use an alternative, make sure that it measures like maple syrup as maple syrup does not measure 1:1 with sugar or other sweeteners.
- This is a 'no added sugar' recipe rather than a 'sugar free' or 'low carbohydrate' recipe that many of my regulars may be used to seeing here. There are carbs and 'natural sugars' in this recipe however.
How to make No Added Sugar No Bake Brownies
Prep Time: 10 minutes, plus set time .
Servings: 9, depending on how they are cut.
- Prepare. Gather your ingredients and if you have not done so, remove the pits from your dates. Also, line a square (9x9") baking pan or dish with parchment paper that extends over the edges.
- Process. Process together your walnuts ( 1 ยพ cups), unsweetened cocoa powder (ยฝ cup) and salt until crumbly. Then add the dates, nut butter, and vanilla extract and pulse until the ingredients come together into a dough-like consistency.
- Press. Transfer your ingredients from the food processor to your prepared baking pan. Then use your hands to press the ingredients in place. You can dampen your fingers if the ingredients get a bit sticky.
- Double Boiler. In a double boiler, heat your coconut cream until melted. Then remove it from the heat.
- Ganache. Use a whisk to blend your remaining cocoa powder and maple syrup with the melted coconut cream and then evenly spread the mixture over the ingredients that you pressed into the pan. Sprinkle the remaining walnuts on top of the ganache.
- Set. Place your pan into your refrigerator for the brownies to set (about an hour to two hours). If you are in a hurry you can try placing the brownies into your freezer until set.
- Serve. Once your brownies have set you can use the parchment paper to lift them out of the pan. Sprinkle the salt on top of the brownies and then slice and serve them.
Expert Tip ๐ To use a double boiler with a pot and an oven-safe bowl, fill the pot with water, making sure the water level is below the bowl when placed on top. Heat the water in the pot over medium heat until it simmers gently, not boiling. Place your coconut cream into the oven-safe bowl and set it on top of the pot, ensuring it doesn't touch the water. Stir the coconut cream occasionally as it heats up from the steam. Once the it has melted remove it from the heat.
How to store fudgy no bake brownies.
Once your brownies have fully set, the can be transferred to an airtight container with parchment paper between layers. When properly stored and refrigerated, these dates can last for up to a week.
