    Ingredients Needed.

    • Almond Flour. Use 'blanched' almond flour.
    • Baking Powder Used for leavening.
    • Sea Salt. Fine sea salt is preferred because it blends evenly into the batter. If you are using table salt instead, use slightly less since it tastes saltier by volume.
    • Unsalted Butter Softened to room temperature.
    • Sugar Alternative Use a granular sugar alternative that measures like sugar and that can also be baked with. Allulose or Monk Fruit Sweetener Blend can work in this recipe.
    • Eggs Large eggs at room temperature.

    • Bake Time 35-40 minutes .
    • Servings 10 .
    • How to serve : Serve dusted with powdered sugar alternative.
    • Notes: You will need a 9-inch springform pan, Mixer, Mixing Bowl, Rubber Spatula, and a cooling rack.

    1. Prepare. Preheat your oven to 350°F. Also, lightly grease your pan with butter or nonstick spray and then dust the pan with almond flour.
    2. Dry Ingredients. In a medium mixing bowl, use a whisk to combine together blanched almond flour, baking powder, and sea salt.
    3. Cream. In a large mixing bowl, beat together the butter and sugar alternative on medium speed until light and fluffy (about three to five minutes).
    4. Wet Ingredients Add the eggs, one at a time gently mixing between additions and then the almond and vanilla extracts, mixing until combined.
    5. Combine. Scrape down the sides of the mixing bowl and then set the mixer on low speed. Gradually add the dry ingredients from the medium bowl. Mix the ingredients until just combined.
    6. Bake. Evenly spread the cake batter into your prepared springform pan. Sprinkle the slivered almonds generously over the top of the batter. Then bake the cake for 35-40 minutes, or until the cake is golden brown on top and a toothpick inserted into the center comes out clean.
    7. Cool. Allow the cake to cool in the pan for 10 minutes before carefully removing the springform ring. Transfer the cake to a wire rack to cool completely. Once cooled, dust generously with powdered sugar before slicing and serving.

    Tips for Making the Best Gluten Free Almond Cake

    The almond flour should be finely blanched almond flour, not almond meal. Finely blanched flour gives this cake a lighter and fluffier texture.

    1. While this cake is made without gluten, you will still need to mix the dry and wet ingredients until just combined. Overmixing can cause the batter to become overly compact and oily as the almond flour releases more fat. We want this cake to be 'cloud-like' rather than dense.
    2. Check on your cake after 25 minutes of baking. If the almonds appear to be browning too quickly, you can loosely tent the cake with aluminum foil.
