Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour. - Baking Powder- 3 teaspoons.
- Butter- ½ cup (1 stick) softened to room temperature.
- Sugar Alternative- 1 cup granular 1:1 equivalent to sugar.
- Brown Sugar Alternative - ½ cup.
- Eggs- 3.
- Milk or Sour Cream or Buttermilk- 1 ⅓ cup. This is where you could sub in ⅓ cup of Sugar Free Caramel Sauce for your choice of dairy.
- Vanilla Extract- 1 teaspoon.
How to make Sugar Free Caramel Cake
- Preheat your oven to 325 and prep 2 9" pans well for nonstick. Usually a spray + flour will work for a recipe like this one.
- Start by mixing or sifting together your flour and baking powder in a medium bowl. Set this bowl aside.
- In a mixing bowl, cream together the butter and the sugars (brown and white). It should take a few minutes on low-medium speed for these to fluff up a bit. Please note that since you are not using actual sugar, the results will not be exact to the fluffiness as if you had used sugar.
- Add the eggs one at a time, mixing between additions.
- We will be alternating adding the dry ingredients from the first bowl that we set aside and the dairy (milk etc). If you are subbing in the caramel sauce, make this part of the rotation as well. Add the vanilla extract and mix until blended, scraping the sides of the bowl as needed. It should take about a minute on low-medium speed to get the batter blended.
- Divide the batter between the cake pans. Bake for 30-35 minutes. This cake is probably done when the sides of the cake start to pull away from the cake pan and the center seems spring-like when gently poked.
