What you will need to make this Sugar Free Caramel Frosting.
- Butter- ½ cup softened to room temperature (1 stick ).
- Brown Sugar Alternative - 1 cup.
- Heavy Cream, Milk, or Half And Half- ⅓ cup (or up to a couple of tablespoons more if you are looking for a thinner frosting). While heavy cream will yield the more luscious result, half and half will be lower in carbohydrates. You could try Greek Yogurt as well (I have not in this recipe).
- Vanilla Extract- 1 teaspoon.
- Sugar Free Powdered Sugar - 2 cups. You can make your own sugar free powdered sugar using this recipe or you can buy sugar free powdered sugar already made online.
How to make Sugar Free Caramel Frosting
- Start by melting your butter in a saucepan. I start at medium heat and adjust from there.
- When the butter has melted you can stir in the brown sugar alternative and then stir in the heavy cream. Stir this while it cooks. After a minute you can lower the temperature to low and continue to cook for another minute or so until the ingredients appear to be blended together. Please note that the sugar free brown sugar will not react exactly as the regular sugar version of brown sugar. We are making do here to avoid the sugar.
- Remove the saucepan from the heat. Transfer the mixture to a mixing bowl.
- Next, add the vanilla extract to the mixing bowl and then beat in the sugar free powdered sugar. This works best when you add a half or third of the powdered sugar at a time, beating between additions. Beat until you reach your desired consistency. If the frosting seems to be too thick, you can add additional cream.
