- Butter. Use cold butter that is cut into cubes. If you are unsalted butter you can add a quarter teaspoon of salt to the flour.
- Buttermilk. Buttermilk really works best in this recipe for flavor, moisture, and acidity needed to assist the leaveners. Plain yogurt could be used as an alternative.
- Vanilla Extract. Added for a bit of flavor balance.

How to make Sugar Free Chocolate Chip Scones

- Prepare. Preheat your oven to 375 and prep a rimmed baking sheet for nonstick. Parchment paper or a baking mat can work.
- Dry Ingredients. In a large mixing bowl, use a whisk to combine together your flour, sugar alternative, baking powder, baking soda, and salt (if using unsalted butter).
- Butter. Use a pastry cutter to work the butter into the dry ingredients until the mixture resembles coarse crumbs. If you do not have a pastry cutter a food processor can be used.
- Buttermilk. Use a clean whisk to combine together the vanilla extract and the buttermilk. Then slowly stir the mixture into your dough.
- Chocolate Chips. Using a rubber spatula or similar item, fold the chocolate chips into your cookie dough until evenly distributed.
- Shape. Place a sheet of parchment paper on a flat work area. Transfer the dough to the parchment paper and use your hands to shape the dough into a large disc that is about an inch and a half to two inches tall. Then use a large knife to carefully slice the disc in half and then slice the halves in half. Continue slicing until you have eight equal sized wedges.
- Chill. Place your scone wedges on to your baking sheet about an inch apart and then use a pastry brush to brush each of the scones with milk or buttermilk before sprinkling the granular sugar alternative on top. Place the sheet with the scones into your refrigerator, for at least 15 minutes, to set.
- Bake. Bake your scones until golden brown, about 20-22 minutes. Then let the scones sit on the baking sheet for five minutes before transferring them to a cooling rack to fully cool.
- Glaze. Use a whisk to combine together the Sugar Free Powdered Sugar, Vanilla Extract, and Heavy Cream. Then use a small spoon to drizzle the mixture over your fully cooled scones.

Cold butter (and other dairy!) is essential for making proper scones as the butter helps keep the structure of the scones while baking. This will help keep your scones both moist and flaky.
