- Sugar Alternative. For best results, use a sugar alternative that measures like sugar and that can also be baked with.
- Ground Cinnamon. For that 'churro' flavor.
- Saltines. Use fresh crackers for optimal crunch and crackers that are individual crackers from a sleeve.
- Butter. Real butter, salted or unsalted, work best in this recipe. I would not use oil.
- Brown Sugar Alternative. While most brown sugar alternatives could work in this recipe, some may not harden correctly after being heated. If you use Erythritol, try using a blend for better results.
- Sugar Free White Chocolate Chips. 'Baking' chips can melt more evenly.

- Prep Time: 15 minutes .
- Bake Time: 12 minutes (included cooking time) .

- Prepare. Preheat your oven to 350f. Also, line a rimmed baking sheet with parchment paper that overhangs the sides of the sheet and then give that a quick spray with nonstick. Also, in a small bowl, use a whisk to combine together the sugar alternative and ground cinnamon.
- Saltines. Lay out your saltines, on your prepared baking sheet, in a single layer.
- Cook. In a small saucepan over medium heat, melt together the butter and brown sugar alternative, stirring often. Once bubbles begin to break the surface, continue to cook the ingredients for another three minutes, stirring continuously.
- Pour. CAREFULLY remove the saucepan from the heat and pour the ingredients over the saltines lining the baking sheet. Use the backside of a large spoon to evenly spread the heated mixture over the crackers.
- Bake. Place the baking sheet into your oven and bake until the crackers begin to brown and there is some bubbling (about five to seven minutes).
- White Chocolate Chips Sprinkle the white chocolate chips over the crackers and then allow the chips to melt on top of the crackers for five minutes before using the backside of a spoon to evenly spread the melted white chocolate over the crackers. Immediately sprinkle the sugar alternative and cinnamon (small bowl first step) over the melted chocolate.
- Set. Allow the candy to cool and set before breaking the crack into smaller pieces and serving.

- There are a few steps in this recipe that require you to work fast as you do not want the ingredients to get cool. This includes the step when you cover the crackers with the heated ingredients and adding the white chocolate chips so that they can melt.
- Using real butter is essential in this recipe for both flavor and texture. Margarine or coconut oil may not work as well and can have an affect the consistency of your toffee.
- Cooling or setting the crackers is an important step. Once the crackers have cooled a bit you can try placing them into your refrigerator to speed up the process.
