How to make Sugar Free Vanilla Cake Without Eggs.
Prep Time: 20 minutes .
Bake Time: 30 minutes .

- Prepare. Preheat your oven to 350 and prep your baking pan or dish for nonstick.
- Dry Ingredients. In a large mixing bowl bowl, sift together the flour, baking powder, salt, and sugar alternative. If you do not have a sifter, you can try using a whisk or strainer. Then use a large wooden spoon or similar item to create a well in the center.
- Wet Ingredients. In a medium bowl, use a clean whisk to combine together the vanilla extract, melted butter, and a half cup of milk. Then pour the ingredients into the well you created in the last step.
- Combine. Use your whisk to mix the ingredients until just combined (the mixture will be very thick). Then scrape down the sides of the bowl, using a rubber spatula or similar item, and whisk in the remaining milk until combined. Note that there may still be a few lumps in the batter.
- Bake. Transfer the ingredients in the bowl to your prepared baking pan or dish and then gently tap the bottom of the pan or dish on your countertop to settle the batter. Bake the cake until the edges of the cake turn golden brown and a toothpick comes out clean, about 30 minutes.
- Cool. Allow the cake to cool in the pan or dish before frosting or slicing your cake.
Tips for making the best eggless cake.
Regular all purpose flour was used to make my cake. For a 'fluffier' or more 'tender' cake you can use cake flour instead of part or all of the all purpose flour.

- My cake was baked in a 9x13" baking dish. While you can bake your cake in a baking pan or cake pan, baking times may differ from mine because of the pan. It is best to keep and eye on your cake while it is baking and to use the toothpick test to make sure that your cake is done baking.
- My cake was flavored with vanilla extract to make it a 'vanilla' cake. Feel free to use the extract of your choice, such as lemon extract or maple extract, instead of vanilla for flavor.
- When you are mixing together your batter, there may be some lumps present. A few lumps are okay as they will most likely bake out. Over-mixing your cake batter can overwork the gluten and cause your cake to be dense. It is best to mix until just combined.
How to store this eggless cake.
Once your cake has fully cooled it can be stored in an airtight container. When properly stored cake should keep at for up to three days at room temperature of frozen for up to a few months. Note that the storage directions may differ depending on any topping or frosting you have used on this cake.
