    This is one of those recipes that it is important for the butter to be softened well. this is because butter that has been softened to room temperature will blend more effectively with the other ingredients, especially for the filling.

    1. When combining the ingredients that will go into the shortbread cookies, mix them until just combined. Overmixing the cookie dough can lead to tough cookies as the gluten becomes activated.
    2. Chilling your cookie dough before baking your cookies helps the cookies keep their shape while baking and make it easier to cut the cookie dough into shapes using a cookie cutter. You can chill your dough for as little as 15 minutes.
    3. If your cookie dough becomes too soft while rolling or cutting, you can simply refrigerate it for 10-15 minutes to firm up again.
    4. While your cookies are baking in your oven it is best to keep an eye on them so that they even bake without burning.
    5. Your cookies are done baking when that turn golden brown around the edges. Overbaking your cookies can make them too crispy, which can make assembling your sandwich cookie more challenging.
    6. Before assembling the cookie sandwiches your should make sure the cookies are completely cooled as you do not want the center filling to melt before your get to enjoy your cookies.

    How to make Sugar Free Vanilla Sandwich Cookies.

    Prep Time: 15 minutes plus chill time .
    Bake Time: 10 minutes .
    Servings: 34 cookie sandwiches, depending on the size of the cutter used .

    1. Cream. In a large mixing bowl and a mixer outfitted with a paddle beater, beat your butter until smooth and creamy (about two to three minutes). Add the sugar alternative to the mixing bowl and continue to beat until creamy and well incorporated.
    2. Flavors. Use a rubber spatula to scrape down the sides of your mixing bowl. Then use the spatula to mix in the in the vanilla extract, lemon juice, and the egg yolk.
    3. Flour. Scrape down the sides of your mixing bowl and then set your mixer speed on low. Gradually add the flour to the mixing bowl, mixing until just combined.
    4. Wrap. Lay out two pieces of plastic wrap out on a flat surface. Place half of your cookie dough onto the center of each of the pieces of wrap. Then shape each of the dough pieces into a disc shape (about an inch thick), wrap with the surrounding plastic, and refrigerate for at least 10 minutes.
    5. Prepare. When you are ready to make your cookies, preheat your oven to 350ยฐF, prep your baking sheets for nonstick, and lightly dust a clean workspace with flour.
    6. Shape. Take one of your cookie discs out of your refrigerator, remove the plastic, and then roll it out to about ยผ inch thickness using a lightly floured rolling pin. Lightly flour your cookie cutter before cutting out the cookies.
    7. Bake. Place your cut out cookies on to your prepared baking sheet about an inch apart from one another. Then bake your cookies for eight to 10 minutes or until the edges turn golden brown. While the cookies are baking you can repeat the process with the remaining cookie dough disc.
    8. Cool. Let the cookies sit on the baking sheet for one minute before transferring them to a cooling rack to fully cool.
    9. Filling. To make the filling, start by beating the butter until creamy (about two to two and a half minutes). Scrape down the sides of the bowl and set your mixer speed to slow. Slowly add the powdered sugar alternative. Then add your vanilla extract along with a tablespoon of the heavy cream. Beat this until smooth, adding additional heavy cream as needed.
    10. Assemble. Place your cooled cookies in pair on a clean workspace with the bottom sides facing you. You can then use a piping bag or teaspoon to coat half of the cookies to about a quarter inch of the edges. Then place the uncoated cookies on top with the side facing you going on top of the filling to create your sandwiches. You may need to gently press the top cookies in place.

    Expert Tip๐Ÿ‘‰ If your filling seems too thick you can thin it out by adding a small amount of heavy whipping cream at a time until you reach a good consistency. For filling that is too thin, you can add additional sugar alternative as needed. .

    How to store vanilla sandwich cookies.

    Once your sandwich cookies have fully set, they can be stored in an airtight container with parchment paper between layers. When properly stored, the cookies should keep for about four days when refrigerated or up to a few months when frozen.
