This Low Carb Tomato Pie is relatively easy to make.
I like that this pie can be made without adding a bunch of extra carbohydrates to it.
Low Carb Tomato Pie
This is a lower carbohydrate version of a really great tasting recipe.
However, it tastes just as good as a Tomato pie made with the carbs in it.
The good news is that this recipe can be made even lower in carbs if you desire to.
This is because the carbs that are added to the recipe mostly come from the tomatoes themselves. Simply using fewer tomateos can bump down the carbohydrates even though. .
Tomatoes are one of the healthiest foods that we can eat.
If you are worried about the carbohydrates that are in fresh tomatoes, there are not a lot of them in there. The average tomato will net out at about 1 carb total (depending on the tomato), making the tomato keto friendly as well.
Tomatoes do have some great nutritional benefits in them.
You probably already know about the vitamin C that is in tomatoes. However, tomatoes also have vitamins A and K as well as the antioxidant Lycopene.
You may be wondering, what is the difference between a Tomato Pie and a pizza.
I remember reading once that the pizza actually started out as a tomato pie. To be honest, I do not know how valid a theory that is but, it does make a sense since they are pretty similar.
Despite the similarity between the pizza and the tomato pie, there is a difference between them.
You know already that pizza is made on top of bread base. On the other hand, the tomato pie can be made on a pastry or pie base.
A tomato pie is not made with a tomato sauce.
This is another big difference between the tomato pie and pizza. However, mayonnaise (low or no carb) is used instead of the tomato or pizza sauce.
This recipe also calls for mozzarella cheese.
However, for a bit of added taste, you can sub in another cheese for part of the mozzarella. Popular choices include grated cheddar or Parmesan.
We will be using a low carb flour to make the crust for this tomato pie.
To make this low carb, use a low carb all purpose flour.

Lastly, to make this recipe gluten free, use an all purpose gluten free flour.

What you will need to make this
- Low Carb All Purpose Flour- 1 ¼ cups. This will be divided, pulling two tablespoons for rolling out the dough in a later step.
Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour.
Make this 'keto friendly' by using a keto friendly flour. - Salt- ½ teaspoon.
- Butter- 1 stick (½ cup) cut into pieces.
- Ice water- three tablespoons.
- Tomatoes- 3-4 (depending on size, cherry or plum are preferred in this recipe) sliced thin.
- Mayonnaise- ½ cup.
- Shredded or Grated Mozzarella Cheese.- 1 cup. You can sub in grated cheddar or Parmesan for ½ cup of mozzarella as long as you get 1 cup total of cheese.
- Garlic- 2 cloves minced. This is about 2-3 teaspoons of the jarred already minced garlic.
- Additional seasonings as desired.
- Fresh basil- as desired for presentation.
Here is How to make Low Carb Tomato Pie
- Start by making the crust.
- In a medium or large sized bowl, whisk together 1 cup plus 2 tablespoons of the flour and the salt.
- Next, cut in the butter until the dough becomes somewhat crumbly in texture.
- Stir in the water, 1 tablespoon at a time. You may not need to use all of the water however, when you dough is no longer stick and seems to hold together it is ready for the next step.
- Now, wrap the dough in plastic wrap or a zip top bag. Place it into the refrigerator for at least 45 minutes.
- When you are ready to prepare your pizza pie, preheat your oven to 450 and lightly spray a pie or tart dish/pan with nonstick.
- We will next roll out the refrigerated dough. Do so on clean surface that has been lightly dusted with some of the remaining flour. Transfer the rolled out dough to the prepared pie pan. Overlapping the edges of the dish/pan is fin as you can roll up the edges to form a crust. Poke the sides and the bottom of the crust a few times with a fork. Bake the crust for 10-12 minutes or until it begins to brown.
- You can remove the crust from the oven and allow it to cool for 10-12 minutes. Meanwhile, you can turn the oven down to 350.
- While you wait for the crust to cool down, take a paper towel to the sliced tomatoes and blot of any excess liquid.
- To prepare the tomato pie, in a large bowl, mix together the mayonnaise, cheeses, garlic, and any desired seasonings. We will prepare this pie by layering the ingredients. Start with a layer of sliced tomatoes and cover that with a thin layer of the mayonnaise and cheese mix. Repeat placing the the layers on to the pie until the tomatoes end up on top. Top with the basil.
- Bake your tomato pie for 25-30 minutes or until the cheese bubbles. Also, you can allow your tomato pie to cool before you serve it.
