Crust.
- Whole Wheat Flour. An alternative all purpose flour can be used as long as it measures like whole wheat flour.
- Sugar Free Powdered Sugar. If you use an alternative sugar, it should be powdered or granular.
- Butter. Your butter should be cold and cut into cubes. If you are using unsalted butter, you can add a half teaspoon of salt to your flour.
- Ice Water. The dough in a galette has to be cold to get that great flaky texture.
- Apple Cider Vinegar. This helps to weaken the gluten which will help with rolling out the crust and baking it flaky.
- Milk. Added as a glaze (kind of like an egg wash).
- Almonds. Sliced or slivered, pressed into the outer crust to decorate the galette and add a bit of flavor. This can be omitted if desired.
Filling
- Apples. Your apples should be washed with the cores removed and then sliced to about ยฝ-1/3" wide.
- Powdered Sugar Alternative. Added as a flavor balance.

- Lemon Juice. This will help the apples maintain their color.

When selecting apples, it is best to choose baking apples as they can stand up to the heat of baking. Baking apples include Granny Smith, Cortland, Honeycrisp, and Jonagold.

- I like to use two different apples, such as one red and one green or one tart and one sweet, for a more interesting galatte.
- The skin was left on the apples used to make my galatte to make it more interesting to look at. You can use an apple peeler to remove the skin if you do not want the skin on your apple slices.
- The flakiness of the crust can depend on how cold the butter is and not over-mixing the crust ingredients.
- Also, the dough can be made ahead of time and refrigerated (for up to a few days) or frozen (for up to a few months).

How to make No Added Sugar Apple Galette

- Start by making the crust. In a medium bowl, use a whisk to combine together the flour and sugar alternative.
- Add the cubed butter to the bowl and use a pastry cutter (or your hands or a fork) to cut the butter into the dry ingredients until the texture resembles coarse sand or peas. Then add the apple cider vinegar and ice water and work the dough into a ball without over mixing it . Wrap the dough in plastic wrap and refrigerate for at least an hour.
- To make the filling, place your apple in a large bowl and toss it with the sugar alternative, apple pie spice, and lemon juice. Then cover the bowl and refrigerate the filling until you are ready to use it.
- When you are ready to make your galette, line a rimmed baking sheet with parchment paper or place the parchment paper on a flat workspace and then transfer it to the baking sheet after rolling it out. Roll the dough out on the parchment paper (mine is a circle but, any shape can work) to about about โ " thick.
- Evenly spread the filling over the dough to about two inches from the edges.
- To fold up the sides of the galette, take a small edge of the crust and fold it over the filling. Repeat this step, folding small sections of the dough each time until the galette is formed.
- Brush the folded crust with your milk and sprinkle or press the sliced almonds on top of it. Then place it in your refrigerator to set for 10-15 minutes.
- Bake your galette in a preheated oven at 350 degrees for 25-30 minutes or until the crust turns golden brown and the filling bubbles.
- Let the galette cool on the pan for 10 minutes before slicing and serving.
