    • All purpose flour. You can sub in a gluten free all purpose flour or low carbohydrate all purpose flour that measures like regular all purpose flour.
    • Baking Powder and Baking Soda. Added for leavening.
    • Spices Both ground cinnamon and allspice.
    • Vegetable Oil . Added for moisture. (You can sub in half with unsweetened applesauce) .
    • Sugar Alternative. For best results, use a sugar alternative that measures like sugar and that can also be baked with.
    • Eggs. Your eggs should be at room temperature.
    • Vanilla Extract. Added for flavor balance. Apple Extract can alternatively be used with or instead of the vanilla.
    • Apples. Your apples should be peeled, cored, and then diced.

    How to make an Apple Cake.

    1. Preheat your oven to 325 and prep a baking dish well for nonstick. I like to grease and dust my baking pan for a recipe such as this one.
    2. In a medium mixing bowl, use a whisk to mix together the flour, baking powder, baking soda, and the spices.
    3. Next, in a mixing bowl, beat together the vegetable oil and the sugar alternative until creamy. Then add in the eggs and vanilla extract.
    4. Add the dry ingredients from the medium bowl to the mixing bowl and mix until just combined. Then fold in the apples.
    5. Transfer the mixture to your prepared baking dish and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
    6. Lastly, let cool completely before slicing and serving.

    For a recipe such as this one, tart apples can work the best as they will balance out the flavors. Use tart apples. Granny Smith, Jonathan, or Pink Lady can work well in this recipe .

    Once this cake has fully cooled, you can wrap it in kitchen wrap or foil. If properly stored, this cake should keep at room temperature for up to three days, in the refrigerator for up to five days, or frozen for up to a couple of months.
