Peanut butter, oatmeal, and chocolate bars are the perfect combination of flavors and textures that come together in chewy and satisfying treat.

To make this recipe you will need honey or a honey alternative. You can find sugar free versions of honey here.
What you need to make chocolate covered peanut butter bars.
- Peanut Butter. You can use a creamy sugar free or organic peanut butter.
- Honey. Added as a sweetener. A sugar free honey alternative can be used to taste (some do not measure like honey).
- Vanilla Extract. Vanilla is used to balance out the flavors.
- Oats. Rolled oats work best in this recipe.
- Heavy Whipping Cream. This is used in making the chocolate ganache layer.
- Sugar Free Chocolate Chips. I like to use a sugar free baking chip as it heats better.
How to Make No Bake Chocolate Peanut Butter Oatmeal Bars.
- Start by lining a square baking pan with parchment paper that overhangs the sides of the pan. My bars were made in an eight inch pan.
- To melt the peanut butter to use in this recipe, use a saucepan on medium-low heat, stirring occasionally. Once it has melted remove the saucepan from the heat and then stir in the honey and vanilla until combined.
- Carefully stir in the oats. I would add a bit at a time, stirring and scraping down the sides as needed. When the oats have been fully incorporated you can transfer the mixture to the prepared baking pan. You can use your hands or the backside of a rubber spatula to press the mixture in place.
- While the peanut butter and oat layer is setting, you can make the ganache topping. First place the chocolate chips into a heatproof bowl. Then, heat the heaving whipping cream on low heat, using a whisk to stir as needed, making sure that the whipping cream does not bubble.
- Once the cream is hot, carefully pour it over the chocolate chips that you placed into a bowl. Allow the cream to sit with the chips for about two minutes in order to melt them. Then stir or whisk the ingredients to smooth them out as needed.
- Evenly distribute the the ganache over the set peanut butter bars. Let the ingredients get to room temperature and then lightly cover them and place them into your refrigerator or freezer to fully set.
- To slice your bars into servings, simply use the parchment paper to life them out of the pan before slicing them.

Tips for making the best peanut butter oatmeal bars.
Rolled oats, or old fashioned oats, work best in this recipe as they offer a wonderful texture to these bars. However, quick oats could work too but, with a smoother texture.
More helpful tips for you.
- To make sure that this recipe has no added sugar in it, use a sugar free or no added sugar peanut butter. Many organic peanut butter also have no added sugar in them.
- Also, use a creamy peanut butter for best results. A creamy peanut butter will combine better with the other ingredients than a chunky peanut butter can, making your bars smoother and better able to hold together.
- These bars need to be fully set before you can slice them into servings. It the bars are not set fully, they can crumble or fall apart when you cut them ๐ .
How to store peanut butter oatmeal bars.
These bars should be stored in an airtight container. I have found that separating layers with parchment paper is a good idea. If properly stored, they should keep for about five days in a refrigerator or frozen for up to three months.
