    • Flour. All purpose flour was used to make my bread. If you decide to use an alternative all purpose flour, like gluten free all purpose flour, make sure that it measures and bakes like all purpose flour for best results.
    • Baking Powder. This is the leavener used in this recipe to give the bread to give this bread a lighter texture..
    • Coconut Flakes. Used for texture and flavor.
    • Bananas. Your bananas should be mashed.
    • Butter. Softened to room temperature. If you are suing unsalted butter, add a half teaspoon of salt to your flour. A neutral oil can alternatively be used for a softer and less dense bread.
    • Egg. Added as an ingredient binder and for moisture.
    • Vanilla Extract. Used for flavor balance.
    • Optional add-ins Sugar Alternative. Use a granular sugar alternative or brown sugar alternative that can also be baked with. This can be beaten in with the butter.
      Chopped Walnuts. or Sugar Free Chocolate Chips can be folded in after the ingredients have been combined.

    How to make No Added Sugar Banana and Coconut Bread

    Prep Time: 15 minutes .
    Bake Time: 45 minutes .
    Servings: 10 .

    1. Preheat your oven to 375 and prep a loaf or bread pan for nonstick. Parchment paper or greasing should work for this recipe.
    2. In a medium bowl, use a whisk to combine together the flour, baking powder, and coconut flakes.
    3. Next, in a large mixing bowl, beat together the mashed bananas and oil until combined. Then stir in the eggs and vanilla extract .
    4. Add the dry ingredients from the first bowl to the combined ingredients in the mixing bowl and mix until just combined.
    5. Transfer the mixture to your prepared loaf pan and then spread the ingredients out evenly.
    6. Bake for 40-45 or until a toothpick comes out clean from the center and the bread turns golden. Allow the bread to cool for about ten minutes in the pan before transferring to a wire cooling rack and allowing to cool completely.

    Expert Tip ๐Ÿ‘‰ The banana bread is baked through when it springs back when lightly touched in the center. Also, if your banana bread is browning too quickly before cooked through in the center, cover lightly (like a tent) with a piece of aluminium foil.

    Tips for making the best banana coconut bread.

    Make sure that you are using a very ripe banana for this recipe. Using a banana that is soft, will make it easier the blend the ingredients more successfully.

    1. Unsweetened coconut flakes are used in this recipe as it is a 'no added sugar' recipe. You can use sweetened coconut flakes if desired.
    2. It is tempting to use coconut flour instead of all purpose in this recipe. However, what you should know is that coconut flour does not measure the same as all purpose which means that it will not work as expected in this bread.
    3. This recipe uses butter rather than oil to make it more dense and to add a buttery flavor. You can use a neutral oil for a softer bread.
    4. When baking your bread check on it frequently while it is baking. Pulling the banana bread out of the oven too soon can cause the center to be soft or gooey as the bananas need to fully bake.
    5. Lastly, allow the bread cool completely before slicing and serving it. Doing so will help to prevent the bread from crumbling when you do slice it.

    Once the bread has fully cooled, it should be stored in an airtight container.
    If properly stored, it should keep for up to five days at room temperature or frozen for up to two months.
