Bake Time: 45 minutes .

- Preheat your oven to 375 and prep a loaf or bread pan for nonstick. Parchment paper or greasing should work for this recipe.
- In a medium bowl, use a whisk to combine together the flour, baking powder, and coconut flakes.
- Next, in a large mixing bowl, beat together the mashed bananas and oil until combined. Then stir in the eggs and vanilla extract .
- Add the dry ingredients from the first bowl to the combined ingredients in the mixing bowl and mix until just combined.
- Transfer the mixture to your prepared loaf pan and then spread the ingredients out evenly.
- Bake for 40-45 or until a toothpick comes out clean from the center and the bread turns golden. Allow the bread to cool for about ten minutes in the pan before transferring to a wire cooling rack and allowing to cool completely.
