    • Cream Cheese. Use whipped cream cheese.
    • Cheesecake instant pudding mix. Use "instant pudding" that also has no added sugar.
    • Sugar Free Powdered Sugar. Granular sugar alternative will not work in this recipe.
    • Vanilla Extract. Added for a bit of flavor balance.
    • Milk. This is used to give the filling a more creamy texture. Heavy cream or a milk alternative can be used.
    • Sugar Free Cookie Crumbs. Use a butter or similar cookie that will complement the other ingredients.

    Tips for making the best cheesecake stuffed strawberries recipe.

    When selecting strawberries, select ripe strawberries that are firm and have good color. The firm structure will hold the filling better and the color will make these look more impressive.

    1. You will need to make room inside of the strawberry in order to add the filling. Using a huller is the easiest way to do this. If your strawberries are large enough, you may be able to use a small melon baller.
    2. Refrigerating your strawberries can help firm them up for easier cutting.
    3. If you plan on serving your stuffed strawberries on a platter or plate, you can use a knife to cut off part of the bottom side before your fill it. Make sure that you do not slice through the strawberry however when you do this.
    4. If you are using a block of cream cheese rather than the whipped kind make sure that it has softened to room temperature first. You can also whip it up using a whisk attachment on your mixer.
    5. Not a fan of 'cheesecake' filling? Try sugar free vanilla instant pudding mix instead.
    6. Make this a keto low carb recipe by using keto instant pudding mix.
    7. To make the cookie crumbs simple place a few sugar free cookies in a zip top bag. Seal the bag and then use a rolling pin to crush the cookies into crumbs.

    Servings: 30, depending on the size of your strawberries. .

    1. Start by hollowing out the strawberries if you have not done so. You can also slice off part of the bottom tips to make it flat enough to stand up when serving these (this is optional).
    2. Next, in a mixing bowl, beat together the cream cheese, pudding mix, sugar free powdered sugar, and vanilla extract. Add milk to thin out the consistency as needed.
    3. Use a piping bag, corner cut zip top bag, or small spoon to fill each of the berries with the filling.
    4. Sprinkle your cookie crumbs on top of the filling as desired.
    5. Refrigerate for at least a half hour before serving.

    Expert Tip ๐Ÿ‘‰ . When hulling your strawberries, make sure that you leave enough wall space in the strawberries (ยผ-1/2" or so, depending on the size of the strawberry) to keep them sturdy enough to hold the filling.

    • 1 tsp Vanilla Extract
    • 1 tbsp Milk - or as needed for consistency
    • Cookie - sugar free cookie crumbs

      I have made this several times for a couple of ladies that live in an assisted living home. They love them. A new lady has recently joined them but does not like strawberries but loves blackberries. I found I can"t stuff a blackberry, I tried, so I got a condiment cup and piped a swirl of cheesecake mixture on the bottom, put a blackberry on top, and a small spoon. Her daughter called me to tell she raved about and now she wants her daughter to make it for her. Her daughter said " thanks"{. I am not sure she meant it. Lol.
