When selecting strawberries, select ripe strawberries that are firm and have good color. The firm structure will hold the filling better and the color will make these look more impressive.

- Next, in a mixing bowl, beat together the cream cheese, pudding mix, sugar free powdered sugar, and vanilla extract. Add milk to thin out the consistency as needed.
- Use a piping bag, corner cut zip top bag, or small spoon to fill each of the berries with the filling.
- Sprinkle your cookie crumbs on top of the filling as desired.
- Refrigerate for at least a half hour before serving.
Expert Tip 👉 . When hulling your strawberries, make sure that you leave enough wall space in the strawberries (¼-1/2" or so, depending on the size of the strawberry) to keep them sturdy enough to hold the filling.

- 1 Sugar Free Instant Pudding Mix - cheesecake variety. You will just need the 4 serving dry mix for this recipe.
- ¾ cup Sugar Free Powdered Sugar
- 1 tsp Vanilla Extract
- 1 tbsp Milk - or as needed for consistency
- Cookie - sugar free cookie crumbs

I have made this several times for a couple of ladies that live in an assisted living home. They love them. A new lady has recently joined them but does not like strawberries but loves blackberries. I found I can"t stuff a blackberry, I tried, so I got a condiment cup and piped a swirl of cheesecake mixture on the bottom, put a blackberry on top, and a small spoon. Her daughter called me to tell she raved about and now she wants her daughter to make it for her. Her daughter said " thanks"{. I am not sure she meant it. Lol.
