How to make No Added Sugar Cinnamon Swirl Bread
Prep Time: 3 hours and 30 minutes (includes rising time) .
Bake Time: 40 minutes .
Servings: 12 slices. .
Notes : This bread is baked in a 9x5โ loaf pan.
Serve: You can serve this bread warm with a bit of butter on top.
- Yeast. In a large bowl, whisk together warm water, warm milk, and yeast. Let it sit until it becomes foamy (about 5-10 minutes).
- Dough. Once your yeast has been activated, add the sugar alternative, melted butter and one cup of flour to the bowl. Use a wooden spoon or rubber spatula to mix the ingredients well and then add another cup of flour and gently mix. You can make adjustments as needed (see tips below) to the dough.
- Knead. Turn your dough onto a lightly floured clean work surface and then knead the dough by hand for 8-10 minutes or until it is easy to work with and no longer sticky. Shape the dough into a ball and then place the dough into a greased, large bowl. Cover with a damp kitchen towel and allow it to double in size (about an hour).
- Filling.To make the cinnamon swirl filling, use a whisk or similar item to combine together the ingredients in a small bowl.
- Roll Out. When your dough has doubled in size, punch it down to release the air. Then lightly flour your work surface as well as a rolling pin and your hands. Turn the dough out onto your work surface and roll out into a 8x15โ rectangle.
- Roll Up. Start by preparing your loaf pan for nonstick. I like to grease and then lightly dust mine with flour. Use a pastry brush to brush the beaten egg white onto the top of your dough rectangle. Then, evenly spread the cinnamon filling mixture on top to about an inch from the edges. Starting at a short end of the rectangle, roll the dough widthwise so your roll is about eight inches long. Then transfer the rolled up dough into your prepared loaf pan with the seam side down. Cover your shaped loaf in the pan until the dough has doubled in size again (about an hour or two).
- Bake. When you are ready to bake your bread, preheat your oven to 350*.Brush the top of the loaf with a tablespoon of melted butter. Then bake your bread or until the top is golden brown (about 35-45 minute)s .
- Cool. Remove the bread from your oven and allow it cool in the pan for 20 minutes on a wire cooling rack. Remove the bread from the loaf pan by placing the cooling rack on top of it and then inverting them together so that what was the top of the bread is now sitting on the cooling rack. Let cool on the rack for at least 10 minutes before slicing.

Tips for making the best Cinnamon Swirl Bread
Getting the right consistency of the dough while mixing or kneading can be tricky. If the dough looks 'shaggy' when mixing , you can leave out the last cup of flour (or part of it). If the dough seems too wet add in additional flour 1 tablespoon at a time until you reach a smooth but slightly tacky dough.
More helpful tips for you.
- If your dough becomes too sticky during the kneading process, lightly sprinkle the dough with a little flour. Be careful not to use too much flour, as you want your dough to be dry.
- I like to place my covered and rising dough in a warm spot, such as on top of my refrigerator, to optimize the rising process.
- When your bread is baking, check on your loaf halfway through (about 20 minutes). If the dough is browning too quickly, simply tent it with aluminum foil.
- To test for doneness, gently hit the top of your loaf with a wooden spoon. If the bread sounds hollow, itis most likely done baking.
How to store cinnamon swirl bread.
Once your bread has fully cooled it can be tightly wrapped in foil, plastic, or a similar wrap. When properly stored, it should keep for up to a few days at room temperature or up to a few months when frozen. The trick to making last longer is to keep air away from the bread.
