ย What you will need to make Sugar Free Iced Lemon Cookies.
- Butter. You butter should be softened to room temperature. If you are using unsalted butter you can add a half teaspoon of salt to the dry ingredients.
- Sugar Free Powdered Sugar. Use a sugar free powdered sugar that measures like regular powdered sugar and that can also be baked with.
- Cornstarch. An essential ingredient that gives these cookies a texture that is crisp while allowing the cookies to 'melt in your mouth'. The cornstarch also helps keep the cookies together (this is an eggless recipe).
- Flour. All purpose flour was used to make my cookies. I do not know if an alternative flour would work as well.
- Lemon Zest. Use fresh lemon zest as the flavor of the cookie itself depends upon it for flavor.
- For the icing- Sugar Free Powdered Sugar as well as lemon juice.

How to make Lemon Melting Moments Cookies
- Use a stand mixer to beat your butter until smooth, light and fluffy. This process can take a few minutes.
- Meanwhile, in a smaller bowl, use a whisk to combine together the sugar free powdered sugar, cornstarch, flour, and lemon zest.
- When the butter is done beating, you can scrape down the sides of the mixing bowl and then add the dry ingredients from the smaller bowl to the mixing bowl.
- Next, beat the mixture until you have soft dough, scraping down the sides of the dough as needed. The dough should be able to stick together when pressed into a ball when it is ready.
- Wrap the dough to plastic wrap or waxed paper and refrigerate for at least a couple of hours to overnight.
- When you are ready to bake the cookies, remove the dough from your refrigerator and prepare a lightly floured work surface. Also, preheat your oven to 350 and prep a rimmed baking sheet(s) with parchment paper or a baking mat.
- Unwrap the cookie dough and roll in out on the floured work space to about ยผ to ยฝ" thick. Use a round cookie cutter to cut out each of the cookies and then place the cookies about two inches apart on the prepared baking sheet(s).
- Bake the cookies for 12-15 minute or until the edges begin to turn golden brown. Then remove the cookies from the oven and let them cool to room temperature on the baking sheet.
- Transfer the cooled cookies to a cooling rack with the bottom sides (flat sides) of the cookies facing up.
How to make the lemon icing for these cookies.
- To make the icing, simply combine together the remaining sugar free powdered sugar with the lemon juice until your reach a soft consistency. You may need to make adjustments as needed to get your desired consistency.
- Use a spoon to coat the cookies with the icing.
