    What makes Iced oatmeal cookies so good?

    This is really a traditional old fashioned cookie with a modern twist.

    I really like how the outside of the cookies are soft and chewy in the center while the outside is slightly crisp.

    The ingredients are basic ingredients that are found in most pantries. I am also including the ingredients for the icing.

    • Oats. Old Fashioned or rolled oats work best in this recipe for the texture.
    • Flour. All purpose flour was used in making my cookies. An all purpose flour alternative can be used if it measures and bakes like all purpose .
    • Baking Powder. Helps to make these cookies fluffy.
    • Cinnamon. Used for a hint of additional flavor to complement the oats.
    • Butter. Your butter should be softened for better blending. If you are using unsalted butter you can add a half teaspoon of salt to the flour.
    • Brown Sugar Alternative. Use a brown sugar alternative that measures like regular brown sugar and that can also be baked with.
    • Sugar Alternative. For best results, use a granular sugar alternative that measures like sugar and that can also be baked with.
    • Eggs. Your eggs should be at room temperature for optimal blending.
    • Vanilla Extract. Added for flavor balance.

    Ingredients needed to make the icing.

    • Sugar Free Powdered Sugar. Granular alternative will not work in making icing.
    • Milk. Any kind of milk can be used.

    How to Make Sugar Free Iced Oatmeal Cookies

    Prep Time: 15 minutes
    Bake Time: 12 minutes .
    Servings: 24. .

    1. Preheat your oven to 350 and prep your baking sheets for nonstick. I like parchment paper or a baking mat for a recipe such as this one.
    2. Start by placing the oats in a food processor and pulsing them for 15-20 seconds. Then transfer the oats to a medium bowl.
    3. Add the flour, baking powder, and ground cinnamon to the pulsed oats and use a whisk to combine the ingredients together.
    4. In a mixing bowl, beat together the butter and sugars until smooth. Then add the eggs and vanilla and mix until combined.
    5. Next, add the dry ingredients from the first bowl to the mixing bowl and mix until just combined.
    6. Use a medium sized cookie scoop to scoop out the dough and place the cookies about an inch and half apart on the prepared baking sheet.
    7. Bake the cookies for 10-12 minutes or until the sides begin to turn golden brown.
    8. Let the cookies sit on the sheet for five minutes before transferring them to a cooling rack to fully cool.
    9. To make the icing, simply mix together the powdered sugar alternative with the milk, making adjustments as needed for consistency. Dip the cookies into the icing or drizzle the on top.

    Expert Tip ๐Ÿ‘‰ If your cookie dough is difficult to work with, you can refrigerate it for 15-20 minutes to help it stay together for you to work with.

    Tips for making the best iced oatmeal cookies.

    Rolled Oats or Old Fashioned Oats are used in this recipe as they are a truer form of oats which results in a better texture for cookies. Pulsing the oats in a food processor however, will help make a chewier cookies with a denser crumb that will hold up better when baked.



    More helpful tips for you.

    1. Most of my recipes come with a low carbohydrate option. Since oats are not low in carbs, this recipe does not offer a low carb option.
    2. Make your cookies even more flavorful by adding raisins, sugar free chocolate chips, or chopped nuts.
    3. I can't resist peanut butter with oats. If you want a bit of peanut butter in your cookies, sub in creamy sugar free peanut butter for up to a half of the butter.
    4. When combining your ingredients together, do so until just combined. Over mixing can ruin the texture of these cookies and we want them soft in the center.
    5. After taking the cookies out of the oven, use a spatula to slightly loosen them from the baking sheet to prevent sticking.
    6. Let the cookies sit on the baking sheet for five minutes before transferring them to a cooling rack to fully cool before adding the glaze.

    How to store iced oatmeal cookies.

    Once these cookies have fully cooled and the icing has set, these cookies should be stored in an airtight container. If properly stored, these cookies should keep for about a five days at room temperature or up to a week when refrigerated.
