- Cinnamon. Used for a hint of additional flavor to complement the oats.
- Butter. Your butter should be softened for better blending. If you are using unsalted butter you can add a half teaspoon of salt to the flour.
- Brown Sugar Alternative. Use a brown sugar alternative that measures like regular brown sugar and that can also be baked with.
- Sugar Alternative. For best results, use a granular sugar alternative that measures like sugar and that can also be baked with.
- Eggs. Your eggs should be at room temperature for optimal blending.
- Vanilla Extract. Added for flavor balance.

How to Make Sugar Free Iced Oatmeal Cookies

- Preheat your oven to 350 and prep your baking sheets for nonstick. I like parchment paper or a baking mat for a recipe such as this one.
- Start by placing the oats in a food processor and pulsing them for 15-20 seconds. Then transfer the oats to a medium bowl.
- Add the flour, baking powder, and ground cinnamon to the pulsed oats and use a whisk to combine the ingredients together.
- In a mixing bowl, beat together the butter and sugars until smooth. Then add the eggs and vanilla and mix until combined.
- Next, add the dry ingredients from the first bowl to the mixing bowl and mix until just combined.
- Use a medium sized cookie scoop to scoop out the dough and place the cookies about an inch and half apart on the prepared baking sheet.
- Bake the cookies for 10-12 minutes or until the sides begin to turn golden brown.
- Let the cookies sit on the sheet for five minutes before transferring them to a cooling rack to fully cool.
- To make the icing, simply mix together the powdered sugar alternative with the milk, making adjustments as needed for consistency. Dip the cookies into the icing or drizzle the on top.

Rolled Oats or Old Fashioned Oats are used in this recipe as they are a truer form of oats which results in a better texture for cookies. Pulsing the oats in a food processor however, will help make a chewier cookies with a denser crumb that will hold up better when baked.

- Make your cookies even more flavorful by adding raisins, sugar free chocolate chips, or chopped nuts.
- I can't resist peanut butter with oats. If you want a bit of peanut butter in your cookies, sub in creamy sugar free peanut butter for up to a half of the butter.
- When combining your ingredients together, do so until just combined. Over mixing can ruin the texture of these cookies and we want them soft in the center.
- After taking the cookies out of the oven, use a spatula to slightly loosen them from the baking sheet to prevent sticking.
