Also, because nobody seems to have sugar free marshmallow fluff in the store.
I just like to know that I have this stuff around.
Marshmallow fluff is one of those great quickie snack ideas that people like to have around 'just in case'.
Just in case you need a quick spoonful of something or just in case you need to have something yummy around to put on top of your cracker or toast.
This is one of those marshmallow fluff recipes that can really impress someone too.

Or, you could spread your homemade sugar free keto marshmallow fluff on some yummy sugar free graham crackers. I suppose this marshmallow goodness may also go nicely with some sugar free chocolate frosting too.
The problem with making any kind of marshmallow recipe is that corn syrup is an active ingredient that is included.
Corn syrup is a sweetener that can tolerate high temperatures. As a result, corn syrup is used when making candy.
For those of us who avoid sugar for whatever reason, corn syrup is something that we avoid.
You may have noticed that alternatives for corn syrup that are often suggest to us are also different versions of glucose too. So, we will work around the corn syrup issue.
There are a few ingredients that you will need for this recipe that you may not have on hand.
Unflavored Gelatin is an important ingredient in this recipe.
You can easily find unsweetened and unflavored gelatin packets online.
You will also need some flavoring such as a vanilla extract.
Vanilla extract is certainly a go to flavoring that we use in a lot of recipes. However, you could also add a bit of fun to your marshmallow cream by using an alternative no sugar added extract or flavoring such as one of these.
I feel that I must add a bit of a disclosure here.
Because we are NOT using sugar and we are NOT using corn syrup, we will not be getting a result that is 100% like the store bought marshmallow fluff that we are all craving. But, you will get a decent sugar free, low carb, and keto marshmallow cream or fluff. Also, your fluff will most likely somewhat solidify when you go to store it. So, my suggestion would be to store it in a microwave safe jar or container and simply heat it up in the microwave (50% or so) when you are wanting to use it. Stirring the marshmallow cream is also essential.

The recipe for Sugar Free Marshmallow Fluff
As mentioned, you will need unsweetened and unflavored gelatin packets which you can easily find online.
You will also need some flavoring such as a vanilla extract.
Vanilla extract is certainly a go to flavoring that we use in a lot of recipes. However, you could also add a bit of fun to your marshmallow cream by using an alternative no sugar added extract or flavoring such as one of these.
What you will need to make this Sugar Free Marshmallow Fluff
Oddly enough, this recipe works best on a dry, as opposed to humid, day. Also, there is a lot of 'whisking' that has to happen in this recipe. As a result, I recommend using a stand mixer with a whisk attachment.
- Water- 1 ½ cups .
- Sugar Alternative- â…“ cup. I suggest using a granular sugar alternative that measures 1:1 in volume with sugar.
- Unflavored No Added Sugar Powdered Gelatin- â…“ cup.
- Cold Water- ½ cup.
- Salt- ½ teaspoon. I like Kosher salt for this recipe because the granules are are larger.
- Vanilla Extract- 2 teaspoons. As mentioned you could sub in an alternative no sugar added extract or flavoring such as one of these.
How to make Sugar Free Marshmallow Fluff
This is one of those recipes that may take some trial and error. I find that whisking this helps a lot. Also, storing in a microwave safe container that you can heat it up in (50%) will help a lot when it comes to using it later on.
- Start by prepping a pan or container with a bit of coconut oil and/or parchment paper to make removal of the fluff a bit easier. If you are intending to store this in a microwave safe glass or similar container, with the intent of heating up when you intend to enjoy this, you may be able to get away with simply spraying with a nonstick.
- We are going to dissolve the sugar alternative in hot water. Boil the 1 ½ cups of water in a saucepan. Turn the heat down to a low to medium heat, and whisk in the sugar alternative. You will need to whisk this as needed. It will take a few minutes for the sugar alternative to dissolve completely and keep in mind that when it does it will not resemble dissolved or crystallized sugar.
- While your saucepan is heating up, you can dissolve the powdered gelatin in the cold water. I suggest placing these ingredients into the mixing bowl and allowing them to sit for while you work.
- When the sugar alternative on the stove has completely dissolved you can remove it from the stove. Give the gelatin in the mixing bowl a quick whisking to ensure that the gelatin has broken up. Then add the sugar alternative to the mixing bowl along with the salt and the vanilla extract. Beat this until it is somewhat fluffy (fluffiness can depend on the sugar alternative that you have used). Transfer to your storage container from the first step. Store this in the refrigerator.
