    1. Prep. Line a square baking pan or dish with parchment paper or foil that overhangs the sides of the pan or dish. You can give this a quick spray with nonstick as well.
    2. Microwave Place your butter and peanut butter in a microwave-safe bowl. Microwave the ingredients on high until melted and smooth (about two minutes), stopping to carefully stir every 30 seconds.
    3. Vanilla. Carefully remove the bowl from your microwave and allow it to cool for one minute. Then stir in the vanilla extract.
    4. Powdered Sugar. Add your sugar free powdered sugar, a half cup at a time, mixing until the ingredients are well incorporated.
    5. Transfer. Transfer the combined ingredients to your prepared baking pan or dish, evenly spreading it into place. Then use a small roller or your hands to press the mixture into place.
    6. Set. Cover your fudge and refrigerate it until set (about two hours).
    7. Slice. Use the overhanging ends of your parchment paper to lift your fudge out of the pan. Then slice your fudge into pieces and enjoy.
