- Preheat your oven to 325. Prepare your baking sheets for nonstick. I like to use parchment paper or a baking mat for a recipe such as this one.
- Place your dry cake mix and jello mix into a large mixing bowl and use a whisk to combine them and to break up any lumps.
- In a medium bowl, combine together melted and cooled butter, the eggs, and the vanilla extract. Transfer this to the large mixing bowl and mix the ingredients until just combined. Then use a rubber spatula or similar item to fold in the white chocolate chips.
- Your dough may seem thick and sticky (which is okay). If it seems to be too thick and sticky for you to work with simply refrigerate the dough for five to ten minutes to set a bit.
- Use a medium cookie scoop to scoop out the cookie dough, roll the dough into balls, and then place the cookie balls and inch and a half to two inches apart from one another on the baking sheet. The cookies will spread while they bake so there is no need to press them in place. You can however, press additional chocolate chips into the tops of the cookie balls.
- Bake your cookies for 10-12 minutes or until the edges are set. The centers will still be soft.
- Allow the cookies to sit on the baking sheet for five minutes before transferring them to a cooling rack to fully cool.
