The sugar free version of a dessert topping standard.
This version still features those yummy strawberries however!!

However, this recipe is for a popular topping idea that could easily be eaten with frozen yogurt or cake or even pancakes.
I must admit that I love eating and using fresh fruit in my recipes.
I found some great ideas that can help make eating and working with fruit even better!

If you have not tried it then you may be wondering what is compote used for.
To be honest, we sell a lot of compote, the sugar kind, at my restaurant.
Our customers really like to top about anything that we bake with it.
Compote is kind of like a fruit syrup that can add a bit of flavor, testure and moisture to about anything.
I am talking about topping ice cream, cake, and even pancakes with compote.
Oh, and let us not forget about the ice cream that can be topped with compote as well!
Compote becomes a syrup when there is a reaction when the fruit and the sugar are heated together.
This reaction is one of the chemical miracles of sugar when it is heated.
There is however, a workaround for this sugar reaction that we can use in this recipe since we are not using real sugar.
Here is how we will get the 'syrup' effect that sugar creates without actually using sugar.
We will use a sugar alternative to pretty much get the sweetness that folks expect from a compote.
However, instead of using sugar, we will usesugar free pectin, which is something that we use in making jelly and jam.

I just mentioned that we will use sugar free pectin instead of sugar in this recipe to help us get that syrup-like texture of compote. Please make sure that the pectin that you are using has no or little sugar added to it.
Here are some more helpful tips for you to use in this recipe.
- Adding a bit of a citrus juice, such as lemon, helps balance out the sweetness of this recipe. Feel free to tweak the amount that you add to this recipe to your tastes.
- Adding a bit of seasoning to your compote can really amp up the flavor. Try using up to a teaspoon of grated ginger or cinnamon for example.
- You can thicken up your compote by adding more fruit. However, you can thin out your compote by adding some water or juice.
- Also, just because this is a strawberry recipe does not mean that it does indeed have to be a strawberry compote. Feel free to use another fruit in addition to or instead of the strawberries to make this compote something different!

The recipe for Sugar Free Strawberry Compote
I mentioned above that you can prepare your strawberries by hulling them and then chopping them up. To remove the hulls you can use a strawberry huller or a straw.
Since we are not using sugar we will use something else to help us get that compote texture.
We will use sugar free pectin instead of sugar in this recipe to help us get that syrup-like texture of compote. Please make sure that the pectin that you are using has no or little sugar added to it.
The ingredients needed to make sugar free compote.
- Strawberries- 1 pint (that is about ยพ of a pound or 12 ounces). Clean, hull, and chop your strawberries. If you are using frozen strawberries, please make sure that you are using strawberries that have no other ingredients (such as sugar) added to the bag.
- Sugar Free Pectin - Two tablespoons or one ounce.
- Sugar Alternative- ยพ of a cup. In this recipe I like granular that measures 1:1 with sugar. You can also add up to a cup in total if you want a sweeter tasting compote result. However, you can add less if you do not want all of that sweetness. The sweetener adds flavor rather than texture to this recipe.
- Citrus Juice- such as lemon, lime, or orange juice. Up to two tablespoons or as needed for consistency.
- Vanilla Extract- ยฝ teaspoon.
How to make Sugar Free Strawberry Compote
- Prepare the strawberries as directed above (hulling, chopping, etc).
- In a mixing bowl, use a fork or whisk to blend together the pectin and the sugar alternative.
- Transfer the strawberries to the mixing bowl and toss them in the blended mixture of sugar alternative and pectin.
- Next, in a saucepan on medium-high heat, bring the strawberries, citrus juice, and vanilla extract to a boil. You can add a bit of water or juice as needed however, be sure to stir the mixture as it heats and boils.
- Once the mixture begins to boil turn the heat down to a simmer and allow it to thicken as desired for another five to seven minutes. You can adjust the flavor as well adding more alternative as needed.
- Store your compote in a covered jar (such as one used for canning) or container in the refrigerator for seven to ten days.
